Answer: | KAI Wasabi Black knives are mostly made with Daido 1K6 steel, which is "stainless" steel, but it's not high-stainless steel like 18-8 (18% Chromium, 8% Nickel). This means that in real-world use of most home cooks the knives will tarnish if not handled properly. Easiest way to avoid that is by hand-washing and wiping dry with a towel. Having said that, if your KAI Wasabi Black knives do develop some small rust spots or begin to have slightly tarnished appearance, the easiest solution to that is a simple rust eraser or high-grit sandpaper. I remove tarnish on my KAI Wasabi Black knives either using Simichrome paste or slurry from the Japanese sharpening stones that I use. Small tip - don't waste your time polishing the sides, it will only make the knives look good, but food will be more likely to stick to the blade. Just enough slurry or paste combined with elbow grease to remove the tarnished steel is all that you need. |

The single bevel grind you are referring to is what's called a "chisel-grind", and as such are designed with either right-hand specific, or left-hand specific users in mind. Only the Deba, Usuba, and Yanagiba knives from the Wasabi line are chisel-ground (right handed orientation). All of the other knives from Wasabi are made with a standard 50/50 grind and will be suitable for left-handed users like myself. Hope this helps. |

Pakkawood Handle
These traditional Japanese-style handles have a slight ridge on the right side, which fits into the curl of the fingers for a comfortable and secure grip. Viewed end-on, the shape resembles the capital letter "D". Pakkawood is waterproof, incredibly durable, and won't harbor bacteria.

Answer: | I have a number of the Shun knives, both in the "Classic" and "Ken Onion" handles. While I initially stumbled upon the Ken Onion version, I have come to love the Classic "D" shaped handles, as I am left-handed and the swell on the "D" fits perfectly under my thumb when I use the knives left-handed. I don't believe you will have any difficulty using the standard knives with your left hand. Incidentally, the Shun knives are a joy to use if you love cooking. They are well balanced, beautiful to look at, and extremely functional. The 16-degree angle allows them to cut with ease, and are just a delight to own if you like precision tools. Just be careful that when you hone or sharpen them that you maintain the Asian angle of 16 degrees, and not the American or European angle of 30 degrees. |
