Question: Does the tool holding handle come with the system? In the video it holds the tool steady on the table top
Answer: I use it on my 8" chef knives, but to maintain a more consistent sharpening angle it's better to do only half of the blade at a time. You can do this by first positioning the guide clamp about a quarter of the way down the blade from the handle and sharpening from handle to center, then move the clamp to the same position between center and tip and doing that half. Better yet, buy a second guide clamp. Then you can position both clamps at the same time before you begin sharpening. That both speeds the sharpening and makes it easier to see if you have the same distance from guide to edge in both positions. I've tried many, many different kinds of sharpeners, and the GATCO is my favorite for establishing a great edge with minimal material loss. It's fairly foolproof, and easy to put an insanely sharp edge on your knives with this. For edge maintenance and periodic honing, though, I use a Spyderco Tri-Angle Sharpmaker. The setup is quicker, and it doesn't matter what size knife you're sharpening. I do find it difficult to get the guide clamps in GATCO style systems in exactly the same place when I go back later to tune up a blade, which means I usually find myself sharpening at a slightly different angle the next time around and need to more or less start over from the beginning each time rather than just doing a quick touch-up on the edge. Setting the initial edge at a shallower angle with the GATCO, like 20 or 25 degrees per side, makes it a piece of cake to tune it up later with the Spyderco's 30 degree rod position. You end up with a double bevel, which is a good thing.
Question: Lansky & Gatco sharpening systems seem similar. Is one better than the other
Answer: From searching around the internet, I got this info from various places: Black: 80 grit Yellow; 120 grit Green: 220 grit Red: 320 grit The serrated one (blue) is supposed to be a medium grit, so I guess it's the same as green (220).
Question: Is this only for small knives or can it handle full size chef knives as well
Answer: I bought several of these. The nylon sheath is designed to be held by a belt or stuck over the belt, or top of your pants or equivalent. So you have two different methods engineered into the sheath. It has a plastic tab that allows the sheath to clip-on, similar to a cell phone clip. But, the nicest feature I like is the backside of the sheath which holds the clip is actually designed to allow you to slip a belt through the nylon sheath so the belt actually runs through the sheath from the backside. This way, it cannot be knocked off of the belt. Generally this is how I always wear my Schrade Sheath, because there is no chance that it will get knocked off if I am out in the woods, or riding on a tractor or something. It is very well stitched and very secure. I have used these for years, and I have never even torn the stitching. I would say that the plastic belt clip- which is more of a "city boy" clip, doesn't seem to be a very secure way to carry the sheath, but if you are just grabbing it and slipping it over a bag or pair of pants, it would be fine.
Question: What grit are the stones
Answer: They do back out and get loose no matter what you do to them. the threads on mine stripped from having to constantly tighten them down. The tool itsleft while not the quality of the original would not be bad if it wasn't for the terrible torx bolts. Also the cutting jaws have so much clearance between them that's it's only good for thicker copper wire or softer materials, I tried to cut some stainless safety wire .032 and it dented the cutting edge. But as others have said for the price it's not the worst.
Question: Is the sheath designed to connect to a belt
Answer: Partially open up one of the other 'locking' blades and it will release the locking feature. If you have opened them all and all are stuck, you have to use another tool, a skinny flat screwdriver will work. Just stick it under the locking spring and lift it slightly to release the tools. Fold them out just a little bit and they will be free.

Question: I have the Lansky set with natural stones. Looking at buying the diamond set. How does one clean the stones to remove metal build up
Answer: I think the answer to this was a bit hasty. The first thing to know is serrations are typically only sharp on one side. Only sharpen that side and leave the other side flat. You use the edge of the stone to sharpen a serration. Turn the stone about 30 degrees clockwise in your hand and run that edge where the two edges meet 90 degrees. More then basic sharpening is pointless as this uses a saw motion not a slice motion to cut. Lansky and many others now make triangle shaped stones specifically for this.All that being said, serrated knives are like prostitutes. You use them and abuse them and rarely give them any love.
Question: How do you clean the sharpeners
Answer: The biggest difference between the $35 set and the $63 set is that the more expensive set is comprised of diamond impregnated steel. This adds to the product's longevity and ability (when using courser stones). The less expensive model uses natural stones and/or ceramic blends which degrade more quickly than the diamond stones. Also, they don't have the quick re-profiling power the diamond stones possess.Both are excellent products, but I personally own and love the diamond set. The aforementioned reasons are why I initially purchased the diamond set over the natural stone set.Hope I helped,Dave

Answer: If I understand your question, the assembly that holds the knife has a built in handle that steadies the unit as you sharpen. I mounted the assembly to a finished board which gives me increased stability, and catches any oil dripping off the blade as you sharpen. I hope this is about what you're asking. Answer: Pretty much the same thing. A steel does not "sharpen" a knife. It just straightens the edge. Sharpening is accomplished with a whet stone or similar item. This is the best steel that I have used and comes as close to sharpening as any I have used.

Answer: The unit controls the grind angle by laying the upper part of the blade against a rest and the bearing surface against a rotating abrasive disk. The angle is fixed, although there is a special insert you can buy for Japanese blades, which has a steeper angle. I use mine with cleavers, and it seems to operate successfully, meaning that they come out sharp and cut well. They may be off of their manufacturer's recommended grind angle, however. Serrated blades work where the scallop is on a single side, and the edge is actually flat. Double sided scallops where the indents are not only from the side but from the edge, if such things exist, have to be done with a hand sharpener. DMT makes hand diamond tools for this purpose.

Answer: I would suggest honing oil if you have it available, I've used water but the oil seems to be more effective.

Answer: 3 different grits: * Coarse 325 grit (45 micron)-Quick sharpening the dull & damaged blade or reset the edge on your knife blade or tool. * Fine 600 grit (25 micron) for a sharp edge. It is for everyday sharpening. * Extra fine 1200 grit (9 micron) for honing. Polish an edge to a razor sharp finish.

Question: About how much ware will it take before it stops sharpening
Answer: Just returned from Alaska. Our biggest catch was 206 pounds---that truly entails a butcher job. Now that I'm back in the states, I will most likely field dress and quarter both deer and elk---all with the same knives. Although I have all my knives sharpened professionally, its that little 4 inch diamond by Smith's that makes it all possible after the first stroke! The answer, "HELL YES!"
Question: is this able to sharpen ceramic knives
Answer: Not without breaking it... You are unable to take it out.
Question: Can you sharpen an axe or machete with this
Answer: depending on what straight edge razor you have purchased you can use it right away. for example Dovo is already sharpened and ready to go right out of the box so you will not need this flattening stone if you have purchased Dovo. So it depends on which straight edge you have. you will need to purchase the stone eventually maybe 3 to 6 months after using your new straight edge razor to give it a new edge on it. This stone works wonders to giving a new edge to straight edge razors.
Question: Can the stone be removed from the plastic base/case, and if so, how thick is it without the case
Answer: I wouldn’t do that too often. 15-20 minutes is plenty.
Question: I recently got into straight razor shaving and I need stone for honing. Do I need to buy flattening stone now or is ready to use for now
Answer: I would not use a flattening stone as they usually aren't flat. Course or extra course dmt stones will be your best bet. Norton Stones will not come flat from the factory they must be flattened. The easiest and best way to know if its flat it's to take a pencil and make grid lines each way.up and down, and across every half inch or so. Then use coarse diamond stone to flatten it. You will see when the grid lines are all gone that your stone is completely flat. When you first start to rub the stones together you will notice the low spots are still marked with the grid lines. Once all grid lines have been removed do it once more and your stone should be flat. Also once you flatten your stone you should take your diamond stone and slightly round the edges of your Norton stone. There should be many videos on this on youtube
Question: I left mine in water over night will it be OK or will it disbond
Answer: As long as it is a lower grit # than the stone, it will work. But obviously the lower the number the faster it will work. I used a 200 grit paper and it took me about 10-15 minutes overall to flatten both sides. I wouldn't go much lower than 100 grit though, it may be too rough of a grit that it could cause some grooves that you wouldn't be able to see, but would still affect whatever you're sharpening.All you need to do is get some dry/wet sanding paper (walmart, lowes, home depot, OSH, anywhere that sells sandpaper will have it) that is around 200 grit. Find a flat surface that you can put the paper on, wet the paper with some water to act as a lubricant, soak your stone till it is saturated with water, and then put the stone on the paper and work at it till you're satisfied that it is flat on both sides. Make sure the area you're working in will be ok if it gets wet, and have extra water ready to rinse the paper and stone with periodically because a lot of the stone will be rubbing off onto the paper. Question: You should flatten Norton every? How do you know it's not flat anymore
Answer: I use a double sided device that is a sharpener on one side and hone on the other that are set at the proper angle, I follow that up with a Japanese oil stone equivalent to 1600 wet or dry paper, I do this will all my knives and some are quite old. Hope this helps
Question: what grit to use when sanding before actually using it
Answer: CHINA, according to the packaging, by way of Lifetime Brands, which purchased one of the dozens of rights to the Sabatier name that were snapped up by non-Sabatier-family manufacturers over the past several decades. The truly high-end Sabatier knives -- e.g. knives made under the license that foodies call "Sabatier-K" -- are (a) still made in France and (b) will say so right on the blade, with "Made in France" printed on the blade underneath the Sabatier name. (For more info about this multi-license issue, see the helpful review below -- posted by a customer whose name I can't recall -- that has "Which Sabatier?" in the title. You might also check out the many passionate discussions about the issue at many cookware, knife, and food websites and discussion groups that have tackled the issue.) That said, this Chinese-manufactured Sabatier is a solid enough knife, albeit prone to deep blade scratches from the honing sheath after just a few uses.
