Answer:	If you're talking about the big round disc, on top in the back, I just leave that alone. It will self adjust. You just lock lid on and make sure the small dial on the top/front is set until the cooking time is over and you release the pressure with it. I know the directions are a bit confusing. I've always had a traditional pressure cooker but swapped over to have two-in-one. I kinda figured it out by trial and error the first time I used it. Once you do it works/cooks everything perfectly! Answer:	You have to turn the triangle shaped handle on top as hard as you can. It has to be very tight or it leaks. Also, there should be a clear rubber gasket in the lid. All the steam should shoot out of the pressure valve. It took us a few tries before we got the hang of it.

Use common sense. Big pots of boiling oil are dangerous whether pressure frying or not. Modern silicone gaskets are safe well above any temperature you reach during ordinary frying. Don't use an ordinary pressure cooker, and don't use one of the electric ones. Ignore the ignorant comments and the fearmongers, watch the video on YouTube, get the right cooker, and proceed with common sense. Then enjoy the best chicken ever.

Answer:	I love mine, the T-fal P2510737 unit. This unit is really only for pressure cooking, NOT pressure canning. The new types are so much easier than the old ones that could overpressurize. One thing that is really important, let the unit vent steam for several minutes before closing it to make sure you get a good seal. The instructions were not a clear on that but i knew to do it from pressure canning.

Answer:	The replacement stock number for the rack is 4008136 according to the Presto website, if you have to replace the rack. But if you are looking for a rack to stack the small jars, you don’t need one. The jars stack on themselves resting the top jars on the rings only of the bottom jars (in a staggered way) You canning stack quart jars.
