Answer:	Handles do just "drift" on either side of the roasting pan; there is no locking mechanism to hold them in one spot. I do not find this a problem though, and I'm betting you won't either. Buy them, you won't be disappointed!

Answer:	Hi, Lei,The pan is constructed in 3pieces, just as shown in the photograph. Angelfood cakes must be baked in a regular pan (NOTsilicone or nonstick finish) to allow the beaten egg whites to rise in baking. If the sides are greased or slick, what results is heavy and thick, not light and fluffy. Angelfood needs something to grab on to in order to cook properly. That being said, if the pan is made in one piece, it can be a real struggle to get it out of the pan without breaking or tearing. This is why the open bottom/flat with tube set works well. After baking and cooldown (I remember my grandmother turning her fresh out of the oven cake upside down on a soda bottle to cool), first get a sharp knife with a straight blade like a bread knife and a tall glass of water. Dip the blade of the knife into the water and run it around the outside edge of the cake. Repeat for that inner tube. It may become necessary to rinse off and re-wet the blade. Once that is done, the cake can be lifted out of the outside pan. To release the bottom of the pan, use the knife gently to seperate them. Once the cake is out of the pan, it can be frosted, filled or garnished. The variety is only limited by your own imagination. That extra bottom might come in handy if you wanted to use the pan to bake a round loaf of bread. It's nice to have options and to find other uses for an item. These pans are intended to be used without greasing. The angel food batter needs to have something to grab onto for it to rise properly.
