Answer: | No. The edge on this knife is very thin and sharp. It is perfect for cutting filets into sashimi pieces without damaging the flesh. However it is not durable enough to withstand the bones and the thickness of a whole salmon. Traditionally the Japanese use a deba knife, and a deba knife only, to filet fish. Answer: | I own the 10" blade. My D shape handle is 5 1/4" long 1" in the widest part. I suggest you to contact Yoshihiro, they have the best costumer service and carry different handle styles, this is one of the best Japanese Knifes and great value. You may want a new roll or the 10" model, which suits me to perfection. |

Answer: | Normal cleanup should involve very hot water and thorough drying. A single drop of tsubaki oil on each side of the blade spread thin with fingers. Start with the drop at the engraving and it should flow into the marks, preventing rust. Store in a dry saya or on a mag bar. Wipe with a clean soft cloth before use.......repeat, enjoy. If rust needs to be removed, use the finest Yoshihiro rust eraser and work with the grind lines. |

Japanese knives should always be sharpened and honed on premium quality Japanese water stones. It is the best surface to sharpen and maintain the blade and also the best tool to preserve and take care of the high quality steel that it is made of.
High Carbon steels are not stainless and will stain with use. Staining is normal and will not affect the performance of the blade or the food that you cut. However, if you wish to avoid staining, keep the blade dry as much as possible and apply a drop of Tsubaki knife oil to the blade before it is put away for storage. If stains develop, much of it can be removed by using a rust eraser.

The performance of a knife can be diminished if not cared for properly.
Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.
Store in a cutlery block or sheath to preserve the cutting edges and prevent injuries.
