The first thing that catches the eye about the beautiful Shun Premier series is its magnificent tsuchime (tsoo-CHEE-may) finish. This hammered finish combined with Premier's mirror blade polish and intricately layered Damascus, gives Shun Premier a look that is at once rustic and sophisticated.
But the real beauty of Premier is how it performs. Premier is designed to provide exceptionally agile handling. The lightweight, razor-sharp blades are quick and precise. The palm swell on the handle nestles into the hand to provide confident control - for both smaller and larger hands. The embossed endcap and brass ring provide both balance and beauty.
Pakkawood Handle
Shun Premier features a PakkaWood Handle that offers a comfortable grip. Walnut-colored PakkaWood is durable, and won't harbor bacteria. The embossed endcap adds beauty and balance.
The handle features a full composite tang that adds strength and balance.
16 Degree Cutting Edge
Like all Shun knives, the Premier line features a 16 degree cutting edge that is hand sharpened and razor sharp. The blade has a double-bevel, quick taper, and flat ground.
VG-MAX Cutting Core
Shun Premier features our VG-MAX steel, the newest of the VG line of "super steels". Available only from Shun, this extremely fine-grained steel has been enhanced to offer "maximum" performance, strength, corrosion resistance, and a sharp, long-lasting edge.

Shun Knives are precision instruments that require fine-tuning to function at optimal performance levels. Restore sharpness and keep Shun’s high-performance cutlery at its peak longer with the Shun Kanso 9-inch Combination Honing Steel. Part of the Kanso line, this honing steel has all the essential elements needed to maintain a razor-sharp edge for ease and efficiency in the kitchen and extend the time between sharpening sessions. Equipped with two surfaces, smooth for day-to-day use and a micro-ribbed surface for weekly honing. A built-in angle guide ensures honing to the correct Shun 16-degree angle and a contoured tagayasan wood handle provides a comfortable grip. Unlike some European knives that need honing after every use, the harder steel that Shun uses only requires honing about once a week with normal use
- High-performance precision cutlery requires regular honing to maintain optimum edge sharpness; with each use, the knife’s edge naturally bends over slightly, resulting in a loss of cutting precision

Answer: | This is a very late answer... but Wusthof claims that they temper their steel to 65 HRC......so Yes! this steel would hone a 63 HRC |

Answer: | I think it's safe to say that this steel is for sharpening. I have used a couple different knives on this steel and, after I had finished with each one, I took a damp paper towel and wiped the steel off and there was a very noticeable amount of metal shavings on the paper towel. I'm actually a little concerned about using my new Wusthof Ikon on this now. I want a steel that I can use every time I use my knife, and I don't like the idea of shaving metal off the blade every time. |
