10 best culinary knives
Culinary knives are essential tools in the kitchen, and they come in various types and styles to serve different purposes in food preparation. Here is some information about culinary knives and related accessories:
Knife Block Sets: Knife block sets typically include a variety of knives housed in a wooden or acrylic block for storage. These sets often include essential knives such as chef's knives, bread knives, utility knives, and paring knives, along with additional specialty knives like steak knives or kitchen shears.
Knife Sets: Knife sets are similar to knife block sets but may not include a storage block. They can range from basic sets with a few essential knives to extensive sets with a wide range of knife types.
Chef's Knife: The chef's knife, also known as a cook's knife or French knife, is a versatile, all-purpose knife with a broad blade that tapers to a pointed tip. It's commonly used for chopping, slicing, and dicing a variety of ingredients.
Paring Knife: Paring knives have a narrow, pointed blade that's ideal for precise tasks like peeling, trimming, and intricate cutting.
Utility Knife: Utility knives are mid-sized knives that bridge the gap between a chef's knife and a paring knife. They are useful for a variety of cutting tasks, from slicing sandwiches to trimming fruits and vegetables.
Bread Knife: Bread knives have serrated blades that make them perfect for slicing bread without crushing it. The serrations allow for clean cuts through crusty bread and delicate pastries.
Santoku Knife: Santoku knives are Japanese-style knives with a shorter, wider blade and a flat cutting edge. They are versatile and excel at slicing, dicing, and chopping.
Cleaver: Cleavers are heavy, wide-bladed knives commonly used for tasks like chopping through bones and tougher cuts of meat. They're also used for smashing garlic or ginger.
Steak Knives: Steak knives are small, serrated knives designed for cutting cooked meat at the table. They often come in sets and have sharp edges for efficient slicing.
Knife Accessories: Culinary knife accessories include items like knife sharpeners, honing rods, knife blocks, magnetic knife strips, and blade guards. These accessories help maintain the sharpness and safety of your knives.
Material and Construction: Culinary knives can be made from various materials, with stainless steel and high-carbon stainless steel being common choices. The construction can be full-tang (the blade extends through the handle) or partial-tang (the blade is attached to a portion of the handle).
Maintenance: Proper maintenance is essential to keep knives in good condition. Regular honing and occasional sharpening are necessary to maintain sharpness. Hand washing and drying knives immediately after use is recommended to prevent corrosion.
Price Range: The price of culinary knives can vary widely, depending on the brand, material, construction, and set size. Quality knives can last for many years, making them a valuable investment for any kitchen.
Choosing the right culinary knives and accessories depends on your cooking style and preferences, so it's essential to consider your specific needs when selecting knives for your kitchen.

User questions & answers
Question: | Why is this knife so inexpensive |
Answer: | These knives are NOT expensive. I bought a 14 in slicing knife at a local cutlery store. It cost me $149, and I hated it from the first cut. I have a Mercer chef’s knife that I have lived, and I didn’t know it was a Mercer knife until today. That’s why I’m here buying the Mercer 14” slicing knife today! I already live the knife I have. I want to love my brisket knife as much as I love my chef knife. |
Question: | what is the angle of the factory edge on the culinary genesis and culinary millennia chef's knives |
Answer: | We factory sharpen all of our double bevel chef knives to 15 degrees |
Question: | Many reviewers mention the knife arrived dull! Is that the case?!?! Please respond |
Answer: | I purchased a different model knife from Mercer. It was the 10" wavy bread knife. The knife I purchase was absolutely razor sharp. Based on my experience and that of others, I would be very surprised to receive a dull knife from Mercer. Highly recommend that you contact them. I am confident that they will want to make it "right" for you. |
Question: | Will this knife cut sushi without shredding the nori |
Answer: | I think you want a fine edge when doing that, so something that has an angle of 14 degrees or less for the cutting edge, on each side, or a blade that's only beveled on one side, and also a blade that doesn't get very much thicker as the blade cuts through. A high quality Chinese chef knife is good, or getting a blade such as the manufacturer suggested is good. I use a European 8" chef knife to cut through sushi rolls, but I have it sharpened at 14 degrees and the blade is thin, but I have to rinse it about every 4 cuts. I also have to hone it more often because of the fine angle. |

User questions & answers
Question: | Where is it made |
Answer: | I've got both -- the straight one. |
Question: | Is it made in China |
Answer: | These are the exact same knives. The 47513 is the newer model. The only difference is on the 40513 it has two sets of numbers 40513 and below that 5.6413.15 and on model 47513 it has just the numbers 5.6413.15 |
Question: | How is this different from the Genesis series blade |
Answer: | A flex knife might be good for trimming bone and fat. This semi-stiff knife has proven to be good for slicing and carving as well as trimming and boning for me. So, it fits both of my needs. I have been very pleased with this knife since I bought it. I use it almost daily and have not had to scrapen the blade yet. |
Question: | Can the mercer culinary ultimate white 11-inch slicer, wavy edge be sharpened |
Answer: | You need this knife if you eat/cook meat. You can buy a whole beef tenderloin (filet) for $6-$8/lb on sale at a big box store on sale and trim it yourself. That'll save you up to $100. You definitely need three knives in a Western kitchen: a French chef's knife; a flexible boning knife, and a bread knife, which you use for splitting cake layers, too. (Make sure the latter is 10" or even 12" long for that.) You can add a small paring knife and/or 6" utility knife down the road if you like. Never buy a knife set, by the way. Knives within any one brand aren't always the best of their kind. Moreover, you'll get knives you don't need and it'll be missing knives you do need. |
