Answer: | The knife is razor sharp, and seems to hold it's edge well. Butchered out a whole baby lamb into serving pieces(chops, shoulder, etc.)This Easter, and have been using it for months before. It's only been honed, no sharpening yet. IMO, a very good buy. |

Answer: | I own both. The 6” at One at home and the 5” at a vacation home. The 5” is slightly easier to control. But the 6” gives more versatility for large cuts such as beef roasts large fowl, etc. If I had to buy one, I’d go for the 6”. I hope this helps. |
