Answer: | Hi there, Good question, especially with the store shelves being stripped of every single bean. It is said the shelf life is 1 to 2 years. I personally have found they last about a year. After that, they get so hard and dry they just won’t cook. Ive tried to cook old beans myself and after12 hours and they were still like rocks. I didn’t add salt because that can also cause beans not to cook. So I would recommend using them within a year. I cook a large pot full when they are fresh and then freeze them. You could probably can the cooked beans too, I haven’t tried that yet, you probably need a pressure canner, they are likely considered a low acid food. Hope that helped. |

1 CUP BEANS + 3-4 CUPS OF WATER = 3 SERVINGS
QUICK SOAK:
In a large pot bring water and beans to boil. Boil for 2 minutes, remove from heat, cover and let stand for 1 hour. Drain water and rinse beans.
OVERNIGHT SOAK:
In a large pot let beans and water stand overnight or at least 6-8 hours, drain water and rinse beans.
COOKING INSTRUCTIONS
- Add water into a large pot to already drained and rinsed beans.
- Heat to boiling then simmer gently for 1-1 1/2 hours or until desired tenderness is reached.
- Add salt and preferred spices (optional).
