Answer: Somebody can't spell. The picture is of a bottle of Raineri Olive Oil (Antica Azienda Raineri) from Imperia. Very definitely a fine quality Ligurian Olive Oil from a company that has been around since around 1910. We spend 8-10 weeks a year in Liguria (based in Alassio). This fine local oil is avaialbale in our favorite gastronomia and is used by many local chefs. apparently there is a Ranieri Olive Oil company from the province of Napoli. They have been around since 1884; but I am not familiar with their products. Highly unlikely that they would be using Taggiasca olives. but the Raineri Gold Label is the real thing!

Answer: Hi! Thanks a lot for your inquiry. According to USDA regulations, a 100% Organic labeled product is, essentially, a Non-GMO product. The United States and Canadian governments do NOT allow companies to label products "100% / Certified Organic" if they contain genetically modified foods or ingredients. GMO produce most of the time were modified to resist synthetic pesticides or herbicides, which is completely in opposition of Organic Agriculture.

Question: on the large tin, the 1 liter..what is the spout like? sometimes on the tins when you pour it, it gets all over the top. picture
Answer: I use this tin also. What I do is, after pouring, before standing the tin upright I have a paper towel handy and wipe the excess. This prevents the residual oil from running all over the top of the tin. I will then use a damp paper towel to clean further.
Question: How long is the shelf life
Answer: Current Inventory has a shelf life of more than 18 months. But this changes all the time as we receive new inventory or sell thru.

Answer: While not officially organic, my experience with similar products indicates that some European companies refrain from the expense and process of obtaining a certified organic product. Specifically, a few small business owners have mentioned that the certification only verifies that at least 70% of the product is organic; meaning, the remaining 30% is potentially unknown as to its quality. Possibly inquiring to the company directly about its harvesting techniques, pesticide usage, etc. can provide some enlightenment.

Answer: Likely 2016 or 2017. You will get the oldest stock they have that is technically not expired. The one I ordered earlier this year was from 2016 harvest and had an expiration date just a few weeks away. Non returnable, no recourse available. I do not recommend this product.

Your Ellora Farms Extra Virgin Olive Oils are cold extracted (better than pressed) with the flesh and pit of the olive separated from the oil by gravity. Olive oil that’s first cold extracted maintains the most antioxidants and therefore it offers the greatest health benefits to you. First cold pressedcold extraction. Many oils are marketed as first cold pressed or cold extraction. "Cold" refers to the fact that no heat is added during extraction. "Pressed" refers to the concept that the olives are crushed in a mill to extract the oil. In today’s world the word Cold Press is obsolete as it is not longer the method of choice which was used centuries ago.

If there are no presses involved, why is extra-virgin olive oil still sometimes called "cold pressed"? Cold-pressed is a marketing term that has no regulated definition. According to the International Olive Council, all extra-virgin olive oils are extracted at temperatures under 27ºC (80.6ºF). So by definition all extra-virgin olive oils are "cold-pressed" or "cold extracted".

Fake or Real ?

But how can you tell if your olive oil is fake or not? Does the fridge test really work? What about the oil lamp test? The North American Olive Oil Association called the home test “completely false and misleading.” Almost any oil will solidify at cold temperatures, depending on its chemical compounds, and even within the EVOO category, factors such as origin, olive variety and time of harvest, will affect solidification.

Even an EVOO that has been adulterated with a bit of canola oil will solidify in the refrigerator and pass the test, even though it is not pure EVOO.

Under the plastic seal there is a grey safety tape with the words "safe tape remove before use" - if that tape is not broken, the olive oil is safe to use. Answer: Not sure how many polyphenols Gundry oil has since I don’t think they publish their analysis certificate. The Governor limited 2021 edition (2020 harvest) has 1490 mg/kg and the certificate is published on our website.

Answer: You can use the measurements on the included chart .For example , a 25 degree angle on the plane blade has a projection of 50 MM. I do the measurement projection then put the plane on a flat surface (in the Cartlife Honing Jig) then check it with my Igaging magnetic digital angle gauge. If you look on UTube there should be a video on this, as well as building a jig so you do not have to measure each time. I built the jig for both plane blades and chisels because they are different. Fall Harvest Tradition

Many of our family's favorite foods rely on fresh and flavorful olive oil. In Nonna's time, Italian olive oil came from olives hand-picked in the Fall. It was full of fresh flavor and met our family's passion for good food.

However, times changed and, for lack of labor, the olive harvest in Europe evolved from hand-picking in the Fall to mechanical "tree-shaking" in the Winter. The result was oil which no longer tasted fresh.

Because we have always been farmers, we found a new way to grow and pick olives in the Fall, which makes fresh and flavorful oil that Nonna Teresa would embrace!

From The Producer: Situated in the picturesque O’Higgins region of central Chile, we own 1,500 acres planted with a variety of different olive trees. Our mission is to ensure the optimal delivery from tree to table of our complex extra virgin olive oils for your enjoyment. The process of oil Alonso begins from the search of a land in Chile with the suitable climatic conditions for the cultivation of the Olive tree. Once these lands are found, the varieties that best suit the climate and type of soil are chosen. This is why our field has more than seven varieties to produce oils of the highest quality and for the most demanding palates. In the production process we are concerned to deliver to our Almazara the fruits with the best characteristics so that they begin the process of transformation to oil. Once the olives have been introduced to our olive mill, they go through a process of cleaning, grinding, churning and centrifuging, avoiding the contact of paste with oxygen as much as possible, in order to obtain oils with intense flavors and aromas. These processes are carried out by experts with vast experience and cutting-edge machinery that makes us the most modern olive oil production plant in South America.

The added benefit being that all the machinery and techniques are in accordance with the latest in the process of making EVOO. for example, from when the olives are harvested until they reach the mill is done in within 90 minutes, which is exceptionally quicker than most "old world" EVOO's.
