Our Premium Olive Oils
This Colavita Premium Selection Extra Virgin Olive Oil is the quintessential everyday oil that is well balanced between fruit and spice and delicate in flavor. We have sourced selections from new harvest oils to create this traditional Colavita flavor, which represents the Colavita family legacy. Cold production obtained exclusively from olives harvested in one or more of these countries: Italy (I), Greece (GR), Spain (E) or Portugal (P). Imported from Italy, this Premium Selection Extra Virgin Olive Oil bears the North American Olive Oil Association (NAOOA) Quality Seal, which means it has been tested for both quality and authenticity according to the International Olive Council (IOC) standards.
As a trusted family company we want to ensure our customers that our products are authentic. The Cermet seal certifies that Colavita Premium Italian Extra Virgin Olive Oil is obtained exclusively from olives harvested and pressed in Italy.
What is Extra Virgin?
'Extra' is the highest grade for olive oil. Virgin oil may be called 'extra' if it has less than 0.8% free oleic acid, and if it exhibits superior taste and aroma. Thus, the 'extra' in extra virgin olive oil means 'premium' or simply, 'the best'.
Why Olive Oil?
Extra virgin olive oils are not processed or refined. Extra virgin olive oil is essentially 'fresh squeezed' from the fruit of the olive tree, without alteration of the color, taste, and nutrients or vitamins. Because of the integrity of the product, and its antioxidant components, extra virgin olive oil will keep longer than all other vegetable oils.
Better than Butter?
Colavita olive oils can be used in place of butter or margarine in many recipes, such as on vegetables, rice, potatoes, and–yes–even baking! To try olive oil in your recipe, try our olive oil recipe converter.

Only organization performing the full International Olive Council (IOC) tests for authenticity (i.e., purity).
Participants cannot choose the samples or where they come from.
Use highly experienced IOC testing facilities, most frequently in Italy or Spain, two of the largest olive oil producing and consuming nations in the world.
Grades of Olive Oil
Extra Virgin Olive Oil
The highest grade and most versatile due to the range of flavor profiles available. Virgin oil must be unrefined, have less than 0.8% free oleic acid and exhibit superior taste and aroma.
Virgin Olive Oil
Virgin olive oil is also unrefined but has a higher level of oleic acid and less bold flavor than extra virgin olive oil.
Olive Oil
Olive oil is a blend of virgin and refine. Heat and chemicals are used in the process of extracting oil and removing flaws. Olive oil contains less than 1% of oleic acid and is a household all-purpose cooking oil.
Olive Pomace Oil
Olive pomace oil is a lesser quality. It is a blend of refined pomace oil and virgin olive oil. Its mild taste is the result of a refining process using chemicals.
Refined Oil
Refined olive oil is made from refining virgin olive oils that have a high acidity level to eliminate defects. It is generally tasteless, colorless, and has no odor.

User questions & answers
Question: | How can you verify its 100% virgin ? just being on lable and from iitaly is not a stamp of authenticity , as a former gov, inspector i need more |
Answer: | You didn't say what you used to inspect to prove you are legit but I'm surprised as a "gov inspector" you don't know about CERMET certification. What is your question? |
Question: | Would this be good to use in soaps and lotions |
Answer: | You could use Extra Virgin in the production of soap and lotion; however, as I've read the cold press character of evoo will give soap a greenish color that some may find undesirable. Some suggest using plain olive oil of grade 40% less. But if a greenish hue isn't an issue with you, the grade of olive oil you choose is really immaterial. So, yes, you could use this. |
Question: | Is IL Duomo pure olive oil still available |
Answer: | Don’t think so |
Question: | is this good for salads |
Answer: | YES |

User questions & answers
Question: | According to the Colavita site, the Organic EVOO has a REDDISH-brown label, and is clearly marked 100% Organic. Is this one organic or not? Thank you |
Answer: | The one I get just says "organic", and also has the USDA Organic label on the side. The thumbnail on the left is not the organic version. I don't see it on this site. Now http://store.colavita.com/oils/extra-virgin-olive-oils/colavita-organic-extra-virgin-olive-oil-16-9-oz-glass.html has it, but the label is different from mine.I always find it tricky to locate the "organic" version: There seems to be some "versioning" going on with the labels. I spend the trouble searching as, for me, it's worth it. Hope that helps. |
Question: | is the 2 liter plastic bottle BPA free |
Answer: | It is glass. |
Question: | could I use this to cook with also |
Answer: | Yes but not at a high temperature or for a long amount of time. |
Question: | expiration date |
Answer: | Very good expiration date for the bottle I purchased. I used the entire contents well before expiration. Excellent quality by the way...I love organic olive oil. |

User questions & answers
Question: | What is the monounsaturated and polyunsaturated fat grams? If you are buying olive oil and none of these are listed its not real olive oil |
Answer: | Polyunsaturated = 1g, monounsaturated = 11g (both per 15 ml serving). This is real olive oil in the sense that it's oil that comes out olives and nothing else. |
Question: | what metal tin is made of |
Answer: | I just looked at all sides of the can and there is nothing saying the metal content of the can. So, I don't know. I do know that we prefer the cans to the plastic bottles, the larger of which are pretty flimsy and don't handle the shipping without deformation. They are also harder to pour from because they are so flexible. We've been buying Colavita for several years and have never had a problem with the cans. |
Question: | Is this oxygen depleted in the tin such as nitrogen or argon purge |
Answer: | No |
Question: | My old 3 l green tin with tree is same as i ordered in your picture, but new tin doesn't say 'premium selection' or 'first cold pressed |
Answer: | I have increasingly been wondering about this brand. I have seen several food coverage stories that have questioned authenticity of the 'premium selection' or 'first cold pressed' and even "fake" olive oils. Colavita Extra Virgin Olive Oil has been mentioned among those brands in question. The problem with these stories is proper, real, research-based attribution. So many food stories are written with sponsorships that I do not pay much attention unless from NYTtimes, NPR The Splendid Table, America's Test Kitchen or other top food reviewers where there is no direct sponsorship, ie... real journalism. I recently received my order and it tasted fine. I am using the oil for every day cooking, not necessarily my "best oil" for dipping or as more direct flavoring. So until I find another affordable, everyday, rich-flavor olive oil I will continue buying Colavita. However, I do pay attention to what I am buying, receiving and the dates on the tin. |
Product description
This premium Italian extra virgin olive oil, made by the colavita family, has rich aroma and a balanced, full-bodied flavor. The slightly spicy and bitter notes in the flavor profile testify to the Italian authenticity and freshness of this product. The timeless look of Clarita's signature extra virgin olive oil was inspired by the containers used by generations of the Clarita family in Molise, Italy to transfer fresh oil from the press to a place of prominence in the family kitchen. During the colder months, olive oil will congeal during shipping. This is normal, natural, and will not disturb the quality of the oil. Please allow congealed oil to rest at room temperature for 24 hours. Product of Italy. Cholesterol and carbohydrate free. Store in a cool dry place.

User questions & answers
Question: | What is the quantity? the description says 3l and then says 33.8oz. however 3l =101oz |
Answer: | Yes, this container is 3 liters. Amazon ad showing 33.8 oz. is a mistake. Young people here are not familiar with the metric system. BTW, very good product. |
Question: | Can this oil be used for frying |
Answer: | Yes. You can use the extra virgin olive oil for regular pan frying as well as deep frying. Like all oils, it will burn if heated above its smoke point. This and other extra virgin olive oils have a smoke point at 410F. |
Question: | is it bottled in Italy or USA |
Answer: | Pressed and bottled at our facility in Pomezia, Italy. Enjoy! |
Question: | What percentage of this oil is olive oil? Nowhere does it certify or claim that it is 100% olive oil (only that olives used are 100% Italian |
Answer: | Your statement is correct. The seal states that it is 100% Italian, and I'm sure it is. It does NOT state that it is 100% pure extra virgin olive oil, and does not taste like it to me. |

What is Extra Virgin?
'Extra' is the highest grade for olive oil. Virgin oil may be called 'extra' if it has less than 0.8% free oleic acid, and if it exhibits superior taste and aroma. Thus, the 'extra' in extra virgin olive oil means 'premium' or simply, 'the best.'
Butter or Oil?
Colavita olive oils can be used in place of butter or margarine in many recipes, such as on vegetables, rice, potatoes, and–yes–even baking! To try olive oil in your recipe, try our olive oil recipe converter.
