Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Whip egg whites and a pinch of salt to soft peaks. Slowly stream in honey and continue to whip to stiff peaks. Fold in vanilla extract and shredded coconut.
- Portion 1 tablespoon per macaroon and space evenly on the prepared baking sheet; smooth tops if desired. Bake for 12 minutes, rotating halfway through baking time for even browning. Let cool completely before dipping in chocolate.
- To finish macaroons, heat chocolate and coconut oil over low heat until completely melted. Remove chocolate from heat and gently dip the bottom of each macaroon to about 1/4 of the way up the side. Place dipped macaroons back onto the parchment lined baking sheet and let set about 30 minutes.

Answer: | I had a box of `Bob's Red Mill Coconut Shredded Unsweetened' and read all the text in it. It does NOT mention GMOs and it doesn't say ORGANIC either. Then, I did some research. The main producing coconut country is Philippines and its big part of their economy. This is the only mention related to GMOs for they are competing with Canada's Canola Oil. CANOLA is a substantial money making for Canada and they subsidize farmers and advertise heavily on cooking shows, etc. Regarding to GMOs and coconut:Dr. Calixto Protacio of the University of the Philippines said the development of CANOLA with a LAURIC ACID content of 60 percent is threatening the Philippines' lead in the oils market. The University of the Philippines professor has urged Filipino scientists to develop genetically modified coconut to increase the production of lauric acid, a substance found mainly in coconut oil and is used in making soaps, insecticides and cosmetics. But what is a canola? It comes from rapeseed. Canola is actually a made-up word for a genetically modified product. (CANada-Oil- Low Acid). The subsidies make it very cheap to use, so almost all processed or packaged foods contain canola oil. Monsanto is one of the largest pharmaceutical and agricultural companies that producers genetically modified foods and seeds, drugs, chemicals, pesticides and herbicides.
