Answer: After 24-48 hours yeast will begin fermenting and there will be bubbles and possibly foam created on the top of the wine. You should also see bubbling through the airlock (half full with water), this is CO2 escaping which is a sign of a healthy fermentation, cheers!

Answer: I purchased the Cabernet Sauvignon kit from the same company. It has everything you need to make the gallon of wine. I would recommend getting a hydrometer to read the specific gravity, but not required. I would highly recommend getting a food safe bucket or have a big bowl available as you will need to sifon the wine from the jug a couple of times.
