I don't know what your requirements are to make cheese. This product controls electrical power to a refrigerator, freezer or any plug in appliance based on the temperature that is set for where the thermostat probe is located. Example: A normal refregerator, set at it's warmest setting is around 40 degrees. I needed a place that was 55 degrees to achieve slow fermentation of fruit so I put the probe inside the ref. and set the digitial setting at 55 degrees. The controller turns the electrical power to the ref. off and on as needed to maintain the 55 degrees. It will also work in areas that would require heat as long as a 120v plug can be utilized from the heating or cooling equipment. A very simple and effective method, not to mention economical.

Answer:	If I remember correctly, it can be pushed but has a little resistance. You do have to let it go after a pushing it a little bit.
