Answer:	There is a definite difference in temperatures between low and high on mine, although I haven't measured it.
Question:	did this item arrive assembled
Answer:	I guess mine heats up quickly enough. If I start something in the morning I set it on "high" and if it starts bubbling I turn it down to "low". If I start something in the early afternoon (12-1pm) I set it on low and it is usually done by the time we eat around 5 pm. I hope this helps. We do live at an altitude of about 7000 ft so it does boil at a lower temp than 220.

Answer:	I don't know the exact number of pounds the shelving can hold, but it seems to be very strong. I currently have a large professional grade mixer on the middle shelf and it seems fine. The metal is thick and sturdy, though I wouldn't stand on it, more because it could tip than because of the weight. Also, the casters are plastic and could break from excessive weight.
