Kershaw Fillet Knives
Kershaw offers users a series of fillet knives perfect for use in a marine, wet, fishing environment. In a variety of blade lengths, blade shapes and handle grips, the blades are made of softer steel enabling the blade to bend without breaking so it will move easily through the body of the fish providing an ideal fillet. The steel is highly corrosion resistant and the handle is durable for filleting comfort. The co-polymer handle material provides an excellent grip and a soft-yet-firm texture. Each fillet knife also comes with a sheath for secure storage or easy belt carry.
High-Performance Steel
Highly stain and wear resistant, 420J stainless steel is excellent for use where 'flex' is desirable as in fish fillet knives. 420J is highly corrosion resistant, almost impossible to rust, very durable, and ideal for marine environments. Suited for knife blades with light to medium use, 420J is a general purpose, fine-blankable stainless steel with good manufacturability and resharpening capacity.
Attractive Blade Finish
When a knife design requires a lighter blade to highlight the steel, Kershaw often applies a satin finish. Satin finishes, whether machine-generated or otherwise, leave faint patterns of lines on the steel, and while they sand away the steel’s brightness, they do not remove it as completely as do other finishes. A satin finish also helps reduce evidence of stains and scratches on the blade.
Durable Handle
Very tough, able to take heavy-duty hard use, and versatile, glass-filled nylon handle material is a nylon synthetic polymer reinforced with glass threads for increased strength. Glass-filled nylon has incredible stiffness for a secure and stable grip, great ability to withstand heat, and dimensional stability combined with excellent wear resistance. Unique to certain Kershaw products, an exclusive and iconic texture is used on the handle to identify the brand and to provide additional traction when using the knife. The pattern is in a “K” shaped repeating pattern to provide an extremely secure and safer grip.

Q & A
「 WHAT IS VG-10 DAMASCUS STEEL?」
An outgrowth of laminated or piled steel, a similar technique used to combine steels of different carbon contents, providing a desired mix of hardness and toughness. This laminating process, in which different types of steel together produce patterns that can be seen in the surface of the finished blade, forms the basis for pattern welding. There is a VG-10 steel core forged with 33 layers of Damascus steel on either side. The steel is laminated in the mold which layers of steel and steel core are sandwiched together. After more than one thousand degrees high temperature heat treatment and minus 100 degrees ice forging process. Make it looks exotic and downright gorgeous. Damascus steel knives are stronger than their historic counterpart, as they contain less impurities and are made with homogenous layers. The blade edge can reach to HRC 60±2 (Rockwell Hardness Scale).
「 HOW TO RECOGNIZE REAL AND FAKE DAMASCUS?」
In some rare cases, people will try to pass off regular stainless steel with no layering as Damascus by laser printing a design on the blade. These are pretty easy to spot because they either don’t look like Damascus or the pattern could just rub off. Real Damascus is intrinsic to the steel itself but fake Damascus is only a facade. You can use sandpaper to get that satin look. Once it’s nice and polished, etch it with ferric chloride or muriatic acid. If the Damascus pattern comes back, it’s real. If not, you have a fake on your hands
「 WHY DO PATTERNS LOOK SO DIFFERENT?」
There are many types of patterns you can achieve during the process of making. the most popular pattern is the “random” pattern, which is why the Damascus may look different from one knife to the other. Either way, most Damascus has its own personality and unique look.

User questions & answers
Question: | Is the cover supposed to be open on the end |
Answer: | There are no other diamond plates available for this model sharpener. The WS Guided Field Sharpener uses a Coarse Diamond Plate, 220 grit and a Fine Diamond Plate, 600 Grit. The ceramic rods may be used for a finer blade edge and then honed using the attached leather strop. |
Question: | What are the dimensions of this tool |
Answer: | The coarse grit diamond plate on the Work Sharp Guided Field Sharpener is 220-grit and the fine diamond plate is 600-grit. The ceramic honing rod is not measured in the same way as the diamond plates, but according to our engineers it would be between a 1000 and 2000 grit. The only difference between the coarse and fine sections of the ceramic rod are the ridges, which reduce surface area to increase surface pressure and acts as a coarser surface. |
Question: | Does it work |
Answer: | With the edge facing away from you, push the blade down the diamond plate (the grey part). There are two diamond plates, one is coarse and the other is fine- running your finger down them will tell you which is which. Use the yellow guides on the ends of the sharpener to tell you what angle to sharpen your blade at. Maintain that angle the whole length of the plate as you slide the blade down it. Don't press too hard, let the plate do the work. If you press too hard you can roll the edge and make it harder to get a sharp edge quickly. Run the blade over the plate about 10 times on each side and then check for sharpness. Repeat until the edge is where you want it. Once you're happy, use the ceramic rod (there are three sides-smooth, ridged, and the fish hook sharpener) and run the blade- at the same angle you used to sharpen it, down the ceramic on alternating strokes until the edge is as sharp as you think you can get it. The leather strop works a little bit, but if you want a cheap strop to put a shaving edge on your blade just take a piece of cardboard and rub in some regular metal polish and let it dry. The cardboard has lots of silicate in it from the manufacturing process and with the polish it acts like a 3000 grit strop to put a fine polish on your cutting edge. The finer the polish, the more like a razor it becomes.Hope this helps. |
Question: | What is the diameter of the sharpening rod |
Answer: | I don't know about pet grooming scissors. It works great on my sewing scissors. |

Durable Handle
Aluminum, anodized for color, hardness and additional protection, is very durable, stain and scratch resistant for strong knife handles. Anodizing changes the aluminum’s surface so a porous coating can be applied that will accept a colored dye. Anodized aluminum gives the knife bright, eye-catching, unique colors and provides a nice, hefty, solid feel to the knife without making the knife heavy.

User questions & answers
Question: | Is this a knockoff the 'h' in Kershaw isn't slanted like on the official website |
Answer: | It comes with a plastic, gray tinted sheath with cutouts to help the blade dry out. It makes the blade completely safe and it fits tight. But the sheath itself does not have any belt slots. I normally keep the knife in a gear bag. Kershaw does sells other fillet knives with belt attachable sheaths, but I doubt the sheaths will be interchangeable if you wanted to stay with this knife. I use this knife to break down 30 lb yellowtail. The knife and the sheath that it comes with works great with no complaints. |
Question: | Dimensions of the knife, open and closed |
Answer: | I would say stamped it's made in China |
Question: | How do I return defective product for repair or replacement |
Answer: | I've used mine for about 5 months but I haven't taken it on the water (ocean) so I'm unable to comment about your issue. Being used on land cleaning fish and rinsed in fresh water I have not experienced any rust staining on my knife. My issue is that the blade cannot hold a fine edge because it chips and fractures when the edge becomes really thin and sharp. |
Question: | I see the pocket clip is reversible. Are the screws that fasten the pocket clip to the knife standard torx screws or something else |
Answer: | Has some flex. Not too much, good for big fillets like King Salmon. |

Apply manual pressure to the flipper or thumb stud with a light push or pull back to overcome resistance of the torsion bar, and the blade opens smoothly and locks into place for confident handling without premature closure.
Secure Locking System
With two steel plates, or liners, on the inside of each handle scale, the liner locking system safely secures the blade open and prevents unwanted blade closure. The lockbar butts up against the blade’s backend to prevent closure, and angles or is bent towards the blade tang creating a bias locked position. Apply manual force to move the lockbar to the side and fold the blade back into the handle.
One-Handed Flipper
Knives with SpeedSafe open have two options for one-handed blade deployment. To activate the smooth, instant open, user can push a thumbstud or press a flipper. The flipper on SpeedSafe assisted knives is easy to operate by both left- and right-handed users. And, once blade swings open and locks into place, flipper either disappears for aesthetics or remains visible for added finger protection.
Convenient Pocketclip
Kershaw designs pocketclips to fit specific knives according to their weight, intended end use, size, style and hardware. Some knives have multiple carry options, others are more streamlined. The reversible pocketclip allows user to choose to carry knife tip-up or tip-down or to choose on which side knife carries. The user may select either a preferred tip position or a preferred carry side.
- Partially serrated EDC, safe folding pocket knife for everyday use—cut rope or cords, heavy cutting tasks, survival tool, self-defense or the perfect gift
- Sharp and reliable 8Cr13MoV stainless steel, slight drop point blade with black oxide coating and diamond-textured, black, glass-filled nylon finger contoured handle
- SpeedSafe Assisted Opening provides a quick and secure open with a pull of the flipper moving the blade out of handle
- Black reversible pocketclip allows tip-up or tip-down carry
- General all-purpose use for daily home needs, working, utility, hunting, fishing, farming, camping, hiking or collecting
User questions & answers
Question: | where is this made - China or elsewhere |
Answer: | It's made in China. This would normally be a deal breaker for me. However, you would be hard pressed to find a better quality knife for the money. China or not, this knife has been manufactured in typical Kershaw quality. |
Question: | Is it spring assisted |
Answer: | YES and NO. No it's not "spring assisted" and YES it has a torsion bar that helps spring the blade open faster than a knife without Speedsafe. |
Question: | What is the length of the blade |
Answer: | The specs I've seen say it's a 3 1/8" blade, and using a tape from the handle edge to the tip of the blade, it's not quite 1/16" longer (depending how I hold the tape). |
Question: | I've always loved good knives but am woefully ignorant of the different metals. S30V, 440HC or 8Cr13MoV, etc. What do they mean, which is hardest |
Answer: | All three of these are stainless steels. To keep things simple, the harder the steel the harder it will be to sharpen, the softer the steel the more often it will need to be sharpened. 440HC and 8CR13MoV are approximately equivalent higher carbon SS, with the 8CR being from China. They will dull faster than S30V but are easier to sharpen. S30V is, being harder and holding an edge better, considered a better choice for knife blades. The softer steels are not bad choices however; they may dull faster but are relatively easy to sharpen, and that's what you get in return for a lower price point for the knives. |

This is the place to start your Shun Sora collection: The Sora chef's knife. Of course you know it's the essential kitchen knife. But what you might not know is that since the Sora line features traditional Japanese blade and handle shapes, in Japan, the Sora chef's knife would be called a Gyuto. It's used for all the same purposes as a chef's knife—all-around food preparation. But the Sora chef's has less curve than a western chef's knife, which means it contacts the cutting board along more of its length, so more food is cut per slice. The Sora has a gentle roll off the tip compared to the large roll of a western style knife, so the Sora needs to be lifted less, making cutting more efficient. Once you try the Sora chef's knife, you'll wonder what you ever did without it.
- The must-have kitchen knife - handcraft in Japan
- Steel: proprietary composite blade technology; VG10 san Mai cutting core; Japanese 420J blade upper
- VG10 is clad with one layer of stainless steel on each side to create the San Mai edge and provide stain resistance
- Handle: traditional Japanese handle design in easy-care, textured PP/TPE blend. Blade Edge - Non-Serrated
- Hand wash only, blade length is 8 inches. Steels are permanently joined
- Hand-sharpened 16 Degree, double-bevel blade (32 Degree comprehensive)
User questions & answers
Question: | Does the knife have a double edge |
Answer: | Yes there is, the blade is branded |
Question: | The chef knife that i bought its been broken after less then two months........there is some warranty |
Answer: | No, it come in a box |
Question: | How often do you need to sharpen this knife, never, rarely or frequently |
Answer: | This is a good low end steel, it's a Chinese copy of 440a making it a solid option for a chef's knife. It should be very easy to sharpen and keep honed, but don't expect it to hold an edge forever as it's still a low grade stainless. If you can sharpen and maintain an edge it should have no issue cutting sweet potatoes. |
Question: | What is the edge shape on this Shun Sora knife? Is it a Western type edge shape of 50/50, or a more traditional Japanese edge shape of |
Answer: | I can't tell how long the sharpness will last but it's been a while since I got it, and it's still pretty good. It doesn't come with a sharpener just the knife by itself. |

Shun
“Shun” (shoon) is a concept at the very heart of Japanese cuisine. In Japanese, shun is the word used to describe local, seasonal food when it is at the peak of its flavor and freshness—at the peak of its perfection.
Shun Cutlery is known for its exquisite beauty and ultra-premium performance. Yet as beautiful as Shun is on the outside, and as beautifully as it performs in your kitchen, its true beauty may be in what you don’t see.
Handcrafted in Japan
Shun is dedicated to maintaining this ancient tradition by continuing to handcraft each knife in our Seki City facilities. Each piece of this fine kitchen cutlery takes at least 100 individual steps to complete. While we maintain these ancient traditions of handcrafted quality, we also take advantage of thoroughly modern, premium materials and state-of-the-art technology to provide that traditional quality to millions of professional chefs and avid home cooks throughout the world.
Knife Steel is Essential
Heat treatment—an invisible, yet vital, process. This exacting process is fundamentally important to ensuring that your Shun provides lasting value. In heat treatment, the metal is heated and cooled to change its microstructure, bringing out its very best properties. With precise heat treatment, blade steel becomes finer grained, making it stronger and harder so blades can be thinner, sharper, and give you a longer-lasting edge. Shun’s experts are, quite simply, masters of the heat treatment process.
Quality and Performance
Shun is the exact moment when a fruit has reached its ideal ripeness, when a vegetable is at its very best, or when meat is at its most flavorful. Home cooks and professional chefs alike celebrate shun in their kitchens, eagerly awaiting each season’s bounty and serving every ingredient in its proper time.
Shun Cutlery proudly takes its name from this Japanese culinary tradition of eating the freshest food at the perfect moment. We took this name to honor this seasonal, mindful way of eating and as a mark of our dedication to making kitchen cutlery that is always at the peak of its perfection, too.
Shun Sora
In Japanese, Sora means "sky." With Sora's proprietary Composite Blade Technology, this beautiful series offers sky-high value by bringing together a VG10 three-layer san mai cutting edge with a polished Japanese 420J stainless steel upper.
This technology puts high-performance material exactly where it's needed most - on the cutting edge.
Knife Handle
The Sora line features a traditional handle design with textured TPE which provides excellent grip, balance, and easy maintenance. Topped on the end of the handle is the Shun logo in stainless steel which enhances and balances the handle.
Composite Blade Technology
Sora uses Kai's proprietary Composite Blade technology to bring together a VG10 three-layer san mai cutting edge with a Japanese 420J stainless steel upper. The two blade sections are laser cut, then fit together like pieces of a jigsaw puzzle.
Braze welding permanently joins them. The attractie wavy pattern at the join is based on traditional Japanese sword hamon lines.
Layered Steel
The Sora line features VG10 clad with a layer of stainless steel on each side to support and protect, then hand-sharpened to 16 degrees each side.
Shun and Sharpening
Shun brand products sold by Kai USA Ltd. are backed by Shun against manufacturing defects. In addition to supporting our products with this claim, we will be happy to sharpen your Shun or Kai knife for free for as long as you own the knife.

High Performance Steel
A budget friendly, reliable, top-of-the-line Chinese produced steel, 8Cr13MoV steel has carbon and slightly less nickel for hardness and edge retention. Kershaw’s precision heat treated 8Cr13MoV steel strongly takes and holds an edge and offers wear resistance that can withstand damage from both abrasive and adhesive wear. 8Cr13MoV is a value blade steel featuring high performing characteristics.
Attractive Blade Coating
Black oxide coating is a chemical bath, or conversion coating, that converts the surface of the blade steel to magnetite. Mainly for appearance, black oxide does add some mild corrosion resistance and tends to minimize light reflection from the blade. The blackening process gives the blade an attractive, smooth, tactical, fierce black surface that is very desirable to knife owners.
Durable Handle
A rubber overmold is a textured rubber layer on the handle scale that provides extra grip, usually molded over a solid polymer handle. With an attractive appearance and exceptional performance, a rubber overmold allows the knife to become more function and durability when in use. Rubber overmolds are textured and detailed to provide a more secure, more safe, nonslip grip.

Product features
