The sharper the edge, the quicker it will dull. That's why great grandpa had a razor strop that he honed his beard cutting steel with every time he used it. A fine razor edge on a fillet knife is important, as is the knowledge that you must hone (not sharpen) the edge regularly to maintain it.

Answer:	Get yourself a Worksharp knife sharpener, either the orig one for $60, or the updated Ken Onion edition ($120), both are FANTASTIC. I’m TERRIBLE at sharpening anything, but this thing (I got the Ken Onion edition) has made it easy, quick and best of all, a “good knife sharpener” out of me! I don’t sell them, have no affiliation... I just like a good product when I get one, which is rare these days. Good luck.

It works flawlessly and the way the knife is designed, the set screw not only goes through the slot on the blade but it also pinches it in place. Sorry but I'm going to have to say you have an operator error. That aside, the Lenox are a much higher quality blade that last much longer. I work construction and my blades take a ton of abuse. Lenox have always been my favorite

Answer:	After using my Kitchen Aid immersion blender I frequently fill a bowl with hot water and a small amount of dish soap, insert the chopper or whisk attachment and turn the blender on in short bursts. The attachment comes our "clean as a whistle." I then unplug and disassemble the unit, wash the blending arm in the bowl, and rinse all parts in hot water. I then allow all parts to air dry. Works great for me.

Answer:	I think it would depend on the features you think you might use. I only use the S blade for ice and frozen fruit smoothies and for making gravy and soups - the other uses stated in the write up are just not things I have used it for. But then again I am not really cooking for a family - just 2 adults. I travel a good bit and take mine with me for the morning smoothies, but I don't really have room for the case, so that stays home. I would check to see if the motor is the same size on the 3 vs 5 speed as that will also make a difference if you plan to use it with ice and frozen fruits like I do - more frozen will need bigger motor. I had my original one for over 12 years which was a variable speed and used it several times a day and the only reason I needed a new one was sloppy in putting the blender mechanism on and when I turned the motor on it broke the connection between the two. The motor still works great, just couldn't get a repair job on it. Hope this helps.

Answer:	The sheath is durable enough plastic and secures the knife with a little friction bump that interacts with the handle. That's pretty handy. BUT... but the belt loop that attaches it to your belt is pretty flimsy. Mine broke last night while fishing which is a pain in the ... It's a different kind of plastic. I'm still trying to figure out how to fix it. It's the one weak point of the whole knife system.
