Answer:	I only open the vents if the bread is still warm when I put it in. I think the bread keeper would be better without this feature as I seldom use it. The knob that turns this vent does not lock and so it tends to move on its own whenever you handle the bread keeper. It seems to be open when I don't want it opened a lot.

As you slice bread you just slide it back in, so will get smaller. the air lock turns so you can close off incoming air if you want. it does not lock either, so occasionally it will turn to an undesired location. If you don't, it's 6 3/8" high. (This dimension could stand to be a bit larger - maybe a half-inch - to accommodate the tallest breads.) The cutting board is a great feature. You can slide the loaf out easily, just far enough to cut off a slice, then it slides back in just as easily. I have 2 of these units as my husband and I have differing tastes in bread.
