Answer:	Yes. I have soaked the ham in water. But not only does it take out the salt, the ham loses a lot of it's flavor. By soaking I found the ham to be edible but almost tasteless.

Answer:	We are required by the USDA to put an expiration date on each package. However, as a cured meat product, it has a water activity Aw rating of .91 or less, and as long as the vacuum seal is not broken it has an extended shelf-life when kept in a cool dry place.

Answer:	It is a little sweet, but very salty! I rinse it prior to cooking, to get rid of some of the salt. I you are new to country ham, you may not know red-eye gravy. just pour a half a cup of coffee in the dripping of the cooked ham. Bring to a boil, pour on grits, eggs or a biscuit. As you can see, our hometown of Mount Airy, North Carolina, is in the foothills of the Blue Ridge Mountains just across the border from Virginia. That why we call our Country Hams Blue Ridge Mountain Cured.

That is also why when Ray Goad opened his legendary Ray's Starlight Restaurant in 1962 he featured Country Ham and Granny Goad's Buttermilk Biscuits. When Andy Griffith came that what he ordered, and when Colonel Harland Sanders came by, he tried to get Ray to share his curing process with him.

For almost 50 years folks from the Northeast and Ohio Valley traveling to and from Florida would arrange their travel schedules so they could have some Country Ham and Biscuits at Ray’s.

Each 12 oz. Pack has 2 Center Cuts + 2 Biscuit Cuts

Our package of Country Ham center cuts and ends are intentionally sliced thin to assure that they remain tender and juicy with very little cooking required. We recommend preheating a heavy skillet to a med-high temperature and adding a tablespoon of cooking oil. When you place the ham into the skillet, it should produce a rapid sizzling sound. Not to worry if it is also necessary to turn your exhaust fan on high. If the ham curls up, quickly use a knife or shears to nip the edge as needed so it can lay flat in the pan.

However, you want to turn the Biscuit Slice in about 45 seconds just as you see the top side bead up a bit. At this point, the ham is practically done and should be removed and platted in another 45 seconds or less. If you like “red-eye gravy,” you can quickly add about 1/4 cup of water, or coffee, and scrape up any residue in the pan, then boil this down by about 1/2. I recommend pouring this into a small dish and using it as a side condiment to taste.

Southern Buttermilk Biscuits are a must, but not to worry. They are not hard to make; it just takes a little practice. Granny Goad's famous recipe that made Ray's Restaurants famous since 1952 can be found on our Web site.

Answer:	Hi Rekha, Sorry to say, Rachael Ray cat foods contain no probiotics. I have since upgraded to Zero Grains Whitefish Recipe, but I saved the label from the Salmon and Lentils Recipe to show my Vet, so I'm looking at it, and there are no probiotics. However, if this is important to you, Blue Buffalo Freedom Dry Cat food is loaded with probiotics. It's expensive, but well worth the price. It's too expensive for my budget with as many animals as I have, but you may be able to afford it. It really is a superior pet food. I used to use it, but cannot anymore. It is my understanding that ALL cat dry cat foods contain ash, sadly, cos ash contributes to urinary infections in males (primarily.) However, Richard, here's the good news, the premium, more expensive cat foods contain far less ash than the commercial, cheaper cat foods. So, it will be a wiser choice to feed your cats a more expensive dry food than cheaper brands. Believe me, Richard, you'll save on vet bills if you invest in a premium dry cat food for your feline babies. This WILL LOWER their ash intake. Thank you for asking. Answer:	Corn gluten meal is not edible by human standards, although it has food applications for pet, cattle and poultry feed. In the early 1990s, researchers discovered that corn gluten meal also had value as an organic herbicide and fertilizer. Crazy they allow it in pet food.
