Answer:	You're correct, it comes with one griddle and one grill plate. However, the two plates make a panini just fine. The top of the panini will have the grill marks, the bottom will be brown all over. To be perfectly honest, I prefer the griddle side best.

Question:	Does the mat sit slightly off the surface to allow water to drain out of the drainage holes? The area I want to use it gets some rain
Answer:	The mats that fit into the tray are sized at 18" x 30"; however, they don't completely reach the edges of the tray. Water is able to drain from around the mat and through the holes. I have a covered porch, so it doesn't get very wet. However, I use a hose to spray the mat clean and the water drains fine. It's a perfect size and you can change out the mats, which definitely look better in the tray than alone.

Answer:	Yes just keep in mind that the mat side walls are one inch high install them at first and if you have to drill through the mat into the cabinet be sure to put a bead of silicone around the screw

Answer:	It should fit. The dimension includes the raised portion of the mat, which can easily be bent for corners. You might have to cut a hole through it for the central post, which is doable, but it won't be as pretty. Overall, this is a really good mat. Sturdy, looks good.
