You get the grill lines on whatever your cooking, no flare-up, don't have to clean your grates, veggies, or fish doesn't fall through the grates. You take the matt out and wash it. My matts last about 2 months bbqing about 3 nights a week.

Answer:	I didn't use one three years ago. The heat is dispersed through the top rear when the lid is closed. I allowed air space all around the grill just in case but it doesn't even get warm.. my only complaint about this grill is the finish on the sides and the bends in the front handle .. they pitted or rusted the first year... other than that it's been a great value

Answer:	Yes you can you can even use a knife and cut directly on the surface. Our tops are made of cold rolled steel
Question:	Does the wooden lid lock in place for traveling
Answer:	I rubbed oil on the entire griddle surface (top. bottom and sides) and I heated up my regular barbeque grill to 500 degrees. I then put the griddle in the grill and closed the lid and let heat up for about a half hour before turning off the grill. I let it cool completely and repeated the process. the griddle came out perfectly seasoned and ready to us.
Question:	Does it cook a steak as well as a grill with a lid
Answer:	the griddle , the oil drip pan, and the adapter. Nice tool for camping or back yard BBQ, there is also 28" and 36"...my next upgrade will be 36". you will need a propane tank (10-15 lb.)
