Ingredients:

  • 1/4 ounce mushroom mix
  • 2 tablespoons unsalted butter
  • 1/4 cup finely chopped onion
  • 1/4 cup all purpose flour
  • 2 cups beef stock
  • 1 tablespoon tomato paste
  • salt and pepper to taste.
  • Directions

Directions: 

  • Soak the dried mushrooms in 1-1/2 cups of very hot water for 15 – 20 minutes.
  • Drain the mushrooms, keeping both the liquid and mushroom.
  • Chop up the mushrooms and set aside.
  • Heat butter in a saucepan until melted. 
  • Add chopped onion and cook until soft and translucent.
  • Stir in flour. Continue to cook over low heat, stirring constantly, until the flour is golden brown. 
  • Remove from heat and stir in beef stock, 1 cup reserved mushroom liquid, chopped mushrooms and tomato paste. 
  • Return to heat and bring to a boil, stirring constantly. 
  • Remove from the heat and stir in salt and pepper to taste.

Question: How Do You Wash It
Answer: The are NOT dried and come in liquid. Just let then drip while. You should also only wash the outside of peppers. Brush out the seeds with you gloved fingers. Cheap "server" gloves are good enough for removing seeds. I always removes seeds so I can use more peppers for the same amount of heat. If they were dried you an use a paper towel or any brush or just your fingers but unless they are fresh I have not needed to do so.

Answer: They are a product of France and rather good. There is nothing like fresh Chanterelles, but one either needs to live where they grow or have a lot of money to buy them.

Answer: I haven't tried growing the other side yet. We had a major forest fire right after my first harvest, so everything was put on hold. But i had an incredible amount of mushrooms from my first harvest. And even though I quit misting the box, another very large shroom grew out of the box. I'll try the other side soon, after soaking it. Most of all, I learned how to grow these delicious mushrooms. As I live in the forest with many decaying logs around, I can order some spores and have a large harvest. I'm very glad I tried this first.
Question: Does this have to be used as soon as received in mail? Will it be effective if received but not used for 1-3 weeks? Trying to time when to buy this
Answer: So I had one of these that I left just sitting around because I was afraid to get it started in the middle of winter... The mycelium cake was so aggressive that it just started growing inside the bag, forcing me to open it up and take care of it! If you're going to keep them in storage, I'd recommend keeping them chilled so that the mycelium isn't trying to grow as aggressively as mine has! I'm not complaining, but it was certainly an unexpected surprise that I probably could've postponed, had I kept the mycelium cake somewhere colder.
Question: Should this be kept inside the home or in the garage? How long does a batch typically take to grow? What recipes do you use them in
Answer: we kept ours in the kitchen.. the first batch took a bit longer because we discovered we did not soak it enough. The second batch only took less than a week. Honestly, we didnt eat them, I procrastinated and didn't pick them soon enough and they wilted. As soon as they grow you almost have to eat them.
Question: How many harvests are you guys getting? I'm looking at this from an economic standpoint -- so is it cheaper than buying mushrooms at the grocers
Answer: I got a large harvest from this...it was amazing how fast they grew. I kept it moist until they started sprouting and then left them pretty much alone. Within about 10-14 days I had more mushrooms than expected!
