Answer:	That's exactly how I'm using it. I have one burner to control the heat in the smoker, hooked to a thermostat (temperature controller) and another creating the smoke.

Answer:	Continuously variable. It says it has three temperature settings but they are just markings on a knob that you can to many more than those three spots, letting you set the temperature to any step between low, med, and high.

Answer:	The diameter of the coils is 5.5 inches, I don't think that would be large enough for a 10-12" skillet.

Answer:	Yes, but the white numbers come off right away. But, the burners all work great. I am happy with the purchase.
