Then we tested it with a digital refractometer (0-50 % brix), and the result was the same as that of the handheld refractometer, which was about 4.1%brix. If you want to know the quality of kombucha, you can use the mixture index to see the result because the kombucha is a mixture liquid, such as specific gravity, density, %brix.
