Answer: | I have this stainless steel (silver) one but from my previous research the previous model (without the stainless steel accent) didn't have a hinged glass lid like this one and they re-designed the slide tray where the water is put to prevent smoking. The previous model also, didn't have ceramic non-stick coating I think. Otherwise, no difference that I can tell - same controls and cooking temp. This model also doesn't have the free griddle plate (it's free but you have to pay approx. $16 ship/handling to get it). |

Answer: | It appears to be a "Ceramic" coating which is the best non-stick from an environmentally safe perspective. The coating is very effective at preventing sticking and it's very easy to rinse off. I don't use any soaps/chemicals to clean it because they degrade the surface and the non-stick will break down - rinsing with hot tap water and wiping with a wet rag cleans it well enough. |

Answer: | My opinion is just turned around from these others, in that once meat reaches a certain temp, usually within about two hours, it will not add any more smoke flavor. Depending on what type of wood your using, hickory being one, you will give your meat a bitter taste. So after using your favorite wood initially then I will switch over to only charcoal if I'm using my Weber or a white oak wood that is very mild to finish it up. Nothing like smoking meat for 8-10 hours and have it taste bitter and over powering. Perfect smoked meat every time for me is charcoal on the Weber with the soak wood chunks for the first two hours and nothing but just plain charcoal the rest. I buy the Kingsford charcoal on memorial and labor day when there two for one. Generally a 5lb bag of chunks will last me nearly a year. So these guys spending $100 to smoke what only cost me about $10 per session. Get the pork butt to 190 degrees, wrap it in heavy duty foil and let it go another 30-45 minutes wrapped, pulled pork every time. Follow these instructions and I'd put your meat against anybody's taste wise... and enjoy the compliments! |

Answer: | If you haven't already purchased this item, I suggest you look at my review. If you have, before mine fell apart, I smoked a brisket in it for 8 hours. The thing with smoking is, you're cooking on a very low heat, so it takes longer. You'll want to add more wood chips ever couple of hours. A side of salmon, depending upon thickness, would get smoked 20 to 30 minutes. Be sure to smoke skin on with fish. You'd not believe the difference! |

Answer: | For the Demeyere? I no longer have this item so can only give you approximates. I still have the internal wire rack, which I use with my Nordic smoker. It's about 11 inches across. I would say not more than three inches clearance in the lid area - from the wire rack to the inner surface of the lid. I could easily smoke two Cornish game hens in this - and did once - but not a full size chicken as it would have been too tall to fit under the lid. Good luck with it if you purchase it. |

Answer: | Please DO NOT use on wooden deck. The heat from my smoker was too hot and caught my whole house on fire. The fire inspector said always use on high heat material like concrete, and no wood or grass. |

Answer: | Not difficult. The racks, drip pan and chip box come out and can be cleaned in your sink or dishwasher. The inside of the smoker is gradually "cured" by the smoke and will take on a dark coating. You can clean this like you would an oven, but you really don't need to. I do recommend that you clean the smoke coating from the glass window each time so you can see the meat cooking. This can be cleaned with soap and water, or with a non abrasive cleaner. Be sure to get all of the cleaner off the smoker so you don't have any issues with the cleaner adding unwanted flavors to the next cooking. |

Taking that much time, and smoking a turkey that big are both dangerous. Slow n low are not safe with turkeys or chickens. I smoke about 100 Turkey's every year, bulk at thanksgiving. I use no bigger than 15 lb birds, and have them done in 4 hours. Salmonila should be a concern |
