Answer:	Yes. The gasket is the dark grey line in the lid that you can see in the photos. The gasket makes a snug fit into a groove in the lid. The seal is very tight when the four levers are snapped down. I do not see a way to remove and replace the gasket when cleaning so it's probably better to leave it in place.

Answer:	It's not made to come apart easily, but it's also possible ~ on the end of the handle not visible in this picture is a smooth-headed bolt that can be unscrewed and then the handle removed. I haven't needed to do that, but I like knowing I can if needed. Kristi
Question:	Do the tines bend when cutting cold butter into flour
Answer:	I am not a novice so here is your answer. Yes. Have the butter nice n cold. Work it w this tool til pea size n then quit, DONT over work it. Use this instrument, much better than fork. When adding water take tablespoons from a container of ice water, again, do not over work. U will have a tough dough that may be easier to handle n together but we r looking for a good product. Only add sufficient water ty o produce desirable dough n this is where experience comes in. I found it took me awhile to achieve an excellent finished pastry. Be patient. This tool is an excellent one.
Question:	Does the handle come apart from the blades for cleaning or is it one piece construction
Answer:	I just sharpen mine at a 20° angle, the closer the finer the edge. They work, a nice set.

Answer:	You should never put any professional knives in a dishwasher, but these are cheap enough its probably fine. These are not good quality knives.
Question:	What are the dimensions of the case? Would it fit in a kitchen drawer? I have no counter space
Answer:	bought them for my grandson. I suggested hand wash and dry with occasional sharpening. He loves to cook and the was a good starter for him. When I visit my daughter in Oregon, he and i mess up the kitchen together!

Answer:	Not i n my experience. I use cold, not frozen, butter. I squeeze the butter and flour together a little bit with my fingers before using the pastry blender to finish. Works great.

Answer:	I have no idea where they're made. My husband really love them but after about a week he was cutting through some carrots in the tip broke off of one but we've had on for 6 months now and that's the only issue we've had otherwise really great knives.

Answer:	Inside the knife case one one side they have slots above the regular knife slots that fit your smaller knives. I use mine to hold my pairing knife and other little things it's a great bag I go to the culinary institute of America and I use this bag everyday and it never disappoint.

Answer:	The sizes are Korean size so much smaller ‼️. You have to @ least order an 8. Plus the shoes 👞 are already tight. Trust me do not order your regular size, in their sizing you will get an size 5. They are comfortable shoes though. I too work @ a hospital 🏥 and that's why the correct size is so important. Being on one's feet all day. Hope this helps.

Answer:	The blade is 8 in, and handle is 5 in long. Knife is well made and very sharp.

Answer:	Seki, Japan. This knife is made by the famous Yaxell company which makes some supurb professional quality knives. This one is very similar to a Yaxell Zen.
Question:	How many years does its sharpness last? Does this knife come with a sharpener
Answer:	shun has many different "lines" just as yaxell (the mfgr of enso) has many different "lines".Shun classics is closest to what this knife is like. It has more "layers", but after three it really doesn't matter. The enso has enough to make it functional and pretty, but not so many that it becomes a cost issue. Enso, which is really a Yaxell Zen, has a hammered finish which takes more workmanship and might be more functional to reduce sticking, however it also requires more care because those pits, if not cared for could conceivably allow bacteria to grow under certain conditions. Shun has hammered finishes on their "elite" and premier" lines, but not on their classic line. This knife is a much better value for the dollar than the Shun.They both use a core of VG10. At one time, shun was claiming VGmax on even their classics, but they have now been caught. And VG max is just a marketing name. It's a registered trademark, not another quality steel.The Enso has a much better handle than the shun classic. It is closer to what you'd find on thee better lines of shun, or, of course, onall of Yaxell's lines. It is more comfortable if you're cutting for hours. Shun classics are generally used by home cooks. Yaxells are generally used by professional cooks and chefs so if you're only cutting for short periods, the handle doesn't really matter that much.Enso's are a little heavier because of the handles. They are about the same thickness. The shapes of the blades are roughly similar and cutting angle is similar. BOTH are 50/50 bevel.There are plenty of other great knives at the same price point, but this is a bargain if you don't mind it being branded "enso" instead of yaxell. You should also consider Tojiro, Mcuesta ,yaxell zen and yaxell dragon. I'd take any of those over a shun classic, which I think is over priced, over rated and has a crummy handle.
