Answer:	This steel is indeed 1.4116, which is also known as X50CRMoV15. It is a very commonly used steel in kitchen knives, and is the primary steel used by big brands like Wusthof, Mercer, and Messermeister. It is a good steel when heat treated well (don't assume it is equal between all brands and models that use it), and takes and holds a good edge, while remaining easy to sharpen. It will usually be softer but more ductile than VG-10 and AUS-10, so less likely to chip. Typical hardness is 56-59 RC, while VG-10 and AUS-10 will usually be advertised as 60-62 RC. Tuo seems to have done a good job with their treat (in general), and you will probably be impressed with this knife's performance.

Answer:	You turn the handle counterclockwise to grab the lid tightly and continue to turn it in the same direction so you can open the lid. If you need to open a large lid, you can turn the handle clockwise first to lengthen the distance between the two steel teeth.
