I haven't attempted to use it on the harder vegetables. I cut the zucchini in two first because the shorter length is easier to handle. Zucchini is pretty watery, so I spiral it into a colander and salt it and leave to drain over a bowl in the fridge (an hour or up to overnight) Once ready to use, I either pan-fry or roast them to get off some more moisture before adding spaghetti sauce. I use one whole zucchini per person. If you want to be only half good, you can cook a little angel hair pasta and mix them all together! You've still cut down on your pasta consumption, but I like it as is, especially if it's drained first. The watery texture of zucchini is off-putting to most people.
