Answer: These knives, along with all traditional Japanese knives of this style have what are called "push-tangs" or "rat-tail" tangs. There is absolutely nothing wrong with this style tang, and you should not worry. They will most certainly hold up to kitchen use! Knives of this style from Japan can come with price tags of over $500 for a single knife!
Question: Does this knife have an offset bolster like the classic knife? I am lefthanded and don't feel comfortable the way the classic knife is made

Answer: Cardboard on the blade, so you will want to get a cover for the blade itself. The knife comes in a nice black and gold box. No other wrapping of any kind.

Answer: The Shun Premier series does not have an offset bolster like the Classic. it is made for both left and right handed users.
Question: why is this serrated knife not serrated in the middle
Answer: If you mean single or double bevel it is double bevel, sharpen on both sides to 15 degrees.EDIT: Amazon is mixing questions for all Kai Wasabi knives, the Nakiri and utility are double bevel. The deba, yanagabi are single bevel.

Answer: KAI Wasabi Black knives are mostly made with Daido 1K6 steel, which is "stainless" steel, but it's not high-stainless steel like 18-8 (18% Chromium, 8% Nickel). This means that in real-world use of most home cooks the knives will tarnish if not handled properly. Easiest way to avoid that is by hand-washing and wiping dry with a towel. Having said that, if your KAI Wasabi Black knives do develop some small rust spots or begin to have slightly tarnished appearance, the easiest solution to that is a simple rust eraser or high-grit sandpaper. I remove tarnish on my KAI Wasabi Black knives either using Simichrome paste or slurry from the Japanese sharpening stones that I use. Small tip - don't waste your time polishing the sides, it will only make the knives look good, but food will be more likely to stick to the blade. Just enough slurry or paste combined with elbow grease to remove the tarnished steel is all that you need.

Answer: Forged? No, not forged. But a really nice knife for the price. Good hand feel, reasonably sharp and light. I bought 4 more sizes after the first.
Question: Are these knives made in Japan or Taiwan
Answer: I am left handed. The single bevel grind you are referring to is what's called a "chisel-grind", and as such are designed with either right-hand specific, or left-hand specific users in mind. Only the Deba, Usuba, and Yanagiba knives from the Wasabi line are chisel-ground (right handed orientation). All of the other knives from Wasabi are made with a standard 50/50 grind and will be suitable for left-handed users like myself. Hope this helps.

Question: Is this knife dishwasher proof
Answer: Serrated blades are unnecessary. All you need is one sharp chef's knife for everything, with the exception of butchering 300 lbs pigs. You should use a blade that is sharp enough to cut everything, and you should keep it sharp with a stone. I have the 8" chef's blade Shun and as long as I keep it sharp it will slice as good or better than any serrated blade. I've done my fair share of cutting sandwiches, bagels, squashes, etc with the same blade for the last few years on the line at high-volume fine-dining restaurants. Get a $30 King stone instead of filling your knife bag with unnecessary (and expensive) blades. Also, I slice tomatoes and avocadoes as thinly as I want with little resistance.

In between a paring and chef’s knife in size, the 6-inch Utility Knife has a narrower and straighter serrated blade, enabling it to easily slice through tougher exteriors without tearing the soft interiors of foods like avocados, tomatoes, and fruits like kiwi. It also works well on foods with a tougher casing like some sausages and hard cheeses. Shun knives are made by highly skilled artisans through a more than 100-step process, providing exceptional quality. The cutting core of the blade is made from VG-MAX steel, a proprietary formula of carbon, cobalt, tungsten and chromium for increased durability, corrosion resistance, and sharpness. Question: Single bevel or double? — description says both
Answer: Shun knives are hand wash only. The chemicals and heat used in dishwashers are too abrasive and they will damage the knife.
Question: Do both sides of the serrated blade look identical
Answer: Sorry, Jeff, but all I can tell you for sure is that this Shun knife is an excellent sandwich knife. My qualifications: was a professional gourmet sandwich "builder" and am known to friends and family as "the best" sandwich maker they know. I take that last compliment with a grain of salt, sea or kosher, of course. The only ding against this knife is that it is not made of "springy" steel--it will stay bent in any given forced angle. A fillet knife, in contrast, will not stay bent. I've had/been using this knife for years and the handle, non-plastic, is very comfortable--I am right handed--and shows less wear than the blade. I've never put this knife in a dishwasher and never will. Hope this helps.
Question: Does this come with a protecting sleeve
Answer: Unlikely, partial tang if I had to guess. Regardless, perfectly balanced and very sturdy. This knife is made for slicing tomatoes, it’s not a bayonet. I wouldn’t worry about the tang construction.
Question: does this knife have to be sharpened often
Answer: Actually, this is a scalloped edge, rather than a serrated one (with pointed teeth). To touch it up (all it should need for a long while if used properly), use the edge of a leather strop, with very fine compound, and lightly draw the knife (edge-trailing only) along the strop at the angle of the scallops. To find the angle, if you're not sure, use a Sharpie to color the bevel, and then you'll see where you're stropping. Then once or twice on the flat side of the knife down the flat side of the strop to remove any burr, and you should be good to go. Emphasis on lightly, so you don't roll the edge. When it comes time to sharpen, as opposed to honing, a good professional sharpener (I'm one), or send back to Shun. Good luck!

Question: Is this knife can cut cold meat
Answer: Think of it as a single bevel, or you're never going to be able to sharpen it. There's a barely noticeable counter bevel (probably their honing & removing whatever burr got pulled up on the boron steel "middle" layer? I'm away from home, just now and can't look at it). Bottom line: damn thing works better, now, than when I wrote the review. Can't believe Shun had much experience with serrated blades. But they sure thought this one out VERY well!
Question: Can this knife be sharpened like normal on a water stone? i need a knife like this but i don't want to sharpen each individual serration each time. ty
Answer: Both sides look nearly identical! Only the active cutting edge has the serrated sharpening. (like "vvvvv")On the other side you can see the knifetooth. (like "uuuuu")

Answer: No, just a cardboard sleeve as packaging inside the box. We reused it for moving, but it wouldn't hold up over time.

Answer: Nah, though it's a REAL pain to do without a jig. The HRC's up around 64 for the boron steel core. I use this for bread, tomatoes, etc. Have used it VERY often. A thinner, crappier knife might do every bit as well though. MAC, Global, Wurstof & Felix make offset bread & tomato knives for less? The Shun Alton Brown "utility" knife's still my favorite.

Question: is this knife serrated or straight edged
Answer: No, would not sharpen this on a water stone and that would definitely destroy this blade. This knife also is handled differently than a Chefs Knife in that you must use a "sawing" action and not press straight down as is an option on straight blade knifes. I enjoy this knife for cutting (not chopping); beautiful design. Hope this helps!
Question: Can you sharpen this knife
Answer: Yes. Shun sell a rod although you can buy identical cheaper ones. The technique is to just run it along the sides of the blades (both) quickly a few times. Keep it at an angle not directly on the bottom of the knife. It takes 15 or 20 seconds and is effortless. Keeps them sharp.
Question: does it come with a case
Answer: Yes we have this knife in our set. We probably use it the least of our 7 Shun knifes. The utility serrated knife is our go to on so many hings. This knife is good on some softer meat cuts and larger vegetables but it needs to be kept sharp.

Question: Does this knife need regular sharpening
Answer: Yes it comes with a case. But it is very tight. Truthfully I didn't feel good about trying to get the cases on and off, it would be so easy to cut yourself really bad doing this.

Answer: I think you can cut cold meat with any Shun knife, but this one is really best for things like tomatoes or other fruit because the blade edge is deeply serrated. The carving knife is great for meat!
