Question: How are you protecting the juice by shipping in the heat of summer with temperatures over 100 degrees
Answer: The juice is shelf stable and is able to be shipped and stored just like any other fruit juice on the store shelf that does not require refrigeration.
Question: My juice is fermenting but has some juice on the stopper and the water in the airlock has juice. Is this ok
Answer: your air lock allows gas (and fluids ) to escape. while keeping the outside environment out. nothing should back-flow into fermentor (but this is why they recommend filling airlock with sanitizing solution. read up on "blow off" tube and vigorous fementation. you should be ok.....you can replace/refill airlock.
Question: Will my wine be on if I was missing packet of Potassium Metabusulfite
Answer: this is one of the agents used stop/inhibit fermentation. used a few days before bottling

Answer: I purchased the Cabernet Sauvignon kit from the same company. It has everything you need to make the gallon of wine. I would recommend getting a hydrometer to read the specific gravity, but not required. I would highly recommend getting a food safe bucket or have a big bowl available as you will need to sifon the wine from the jug a couple of times.

Question: Any clue how to make it not so sweet? It definitely did not ferment properly I had no problem with the red from same seller
Answer: There a few steps to take to insure you have a full fermentation. A full fermentation will never be too sweet from these kits. Take hydrometer readings. Starting SG somewhere around 1,070. After fermentation stops. (bubbles settle down and wine starts to clear the hydrometer should read close to 1,000. After de-gassing the gravity should be below 1,000. close to ,990. Wine that is still too sweet has unfermented sugar remaining. Was you fermenting temperature below 68 degrees F. This will cause the ferment to stop. Or as said, to get stuck. Try warming it to about 70 degrees F and see if it starts to make fermentation bubbles in the little air lock. In any case don't bottle this sweet wine, it may start up a new ferment and pop the corks. Hope this has been a help. Michael

Answer: No. You would need to drill this yourself. Or the lid can sit loosely on top of the bucket during fermentation and would not need an airlock.

Answer: This bucket doesn't have measurement lines. Do you mean the three lines at the very top used to secure the lid?

Answer: Those ridges are to secure the lid. To make a six gallon fill line you will need to fill the fermenter with 6 gallons/US of water and draw a line with a indelible marker. This will give you an accurate measurement reference.
Question: how do you start the syphoning process
Answer: Position the fermenter higher than the empty carboy. Attach the racking cane to the racking tube and carefully insert the cane end into the fermenter, leaving it about 1/" above the floor of the fermenter. Suck on the hose end to start the wine flowing and then quickly put the hose into the fermenter, allowing the wine to flow into the carboy until it naturally stops.

Wine expert kits make very good wine. Just be sure to follow the directions EXACTLY and don't be in a hurry to bottle. Do an extra racking to clear your wine if necessary. It will taste like $15 and $20 wine.
