Answer: | I have been using the Body Ecology Kifer starter for raw goat milk for the past 10 years. I'm in a herd share and get 1/2 gal a week. I use about 1/2 c from my previous batch into a guart of raw uncultured milk and let it sit out for 24 hours at about 76 degrees. I only use a fresh pack of starter about every two months. Answer: | I've used this product to make a greek style vegan yoghurt. I add the grains to 32 oz of room temperature coconut water and let it sit until foggy, about 8-12 hours in a warm, dark place. I then mix the coconut kefir with young coconut meat and let that sit in a warm dark place for another 8 hours or so. When done, you have yoghurt. The coconut taste is very faint. I don't taste it. I then use this yoghurt to make lassi, tazikki and other yoghurt dishes. |

Answer: | Hi! The first time I used a culture starter, it did not work as expected either. I used coconut milk, let it sit in a dark place with a temp of 72 F, for 18 hours. It did not seem to work. I put it in the frig and I called Cultures for Health. They told me to take 1/4 cup of this milk and start a new batch with new milk. I did so and then waited for 24 hours. It did smell a bit yeasty and tasted sour and thickened some. So it worked. I did 4 batches , keeping 1/4 cup of cultured milk and starting a new batch each time (no new starter needed). It's best if your milk is not too cold to start with, the room temp is 72 F and above, a dark place, and leave it for 18-24 hours. After the first batch it took maybe 12 hours to work. Answer: | Yes, you can. You need to find a way to keep it consistently warm for about 10-12 hours. Some suggest warming the oven and then wrapping your yogurt container in warm towels, turning the oven off and leaving the door closed. i have hear of people using crock pot similarly. I have tried it in my oven once a number of years ago and it worked. Google some instructions for making yogurt and you will see some ideas. |

Answer: | No, but I doubt that the bacteria will have pesticides. Probably an oversight in the Amazon description. The info insert inside the package does not say anything about organic. The other ingredient is rice maltodextrin which is probably eaten up by the bacteria during the culturing. It is just vegan and made without GMO grains. |

Answer: | To make thick soy yogurt you need an unsweetened soy milk with a high protein count and no additives. Use Eden organic unsweetened soy milk made from only water and soy beans. It has 12 grams of protein per 8 oz. Other brands have much lower protein. Make the yogurt in an Instant Pot. (IP) using the yogurt function. No boiling necessary when using soy milk. Put 1 packet of the yogurt starter culture in a 1 quart (32 oz) Ball mason jar and the entire carton of Eden soy milk (32 oz). It will also fit in a 24 oz. Ball mason jar but it will be filled to the VERY top of the jar and you may have a little milk left over. Put the lid on the jar and shake it to mix the culture and milk. Take the lid off and put the jar in the Instant Pot stainless steel pot. Water in the pot is not necessary. Close the lid of the IP and set it to seal. I am not sure if it is necessary to set it to seal, but I just do it. Press the yogurt button and set the time for 8 to 14 hours. The longer it stays in, the more tangy the yogurt will be. I usually do 10 or 12 hours. When it is done, you will have thick yogurt. No need to add any additives like corn starch, agar agar, xanthan gum etc. You will be amazed at how thick it turns out. Put the lid on the mason jar and store in the refrigerator. When I eat it, I usually add frozen fruit to it. If you have an IP, give it a try. Depending on what size IP you have and what size mason jars you use, you can usually fit more than one mason jar in the IP. Of course, if you use a second mason jar, you will need another packet of culture and another carton of soy milk. |

Add one gallon of juice to a clean, dried glass container Place powder contents of each capsule from one starter pack into juice Stir powder into juice until mostly dissolved (a few lumps are okay!) Place a towel over the mouth of container, you may secure with a rubber band, DO NOT place anything on jar that will create an airtight seal Place container out of direct sunlight at room temperature, ideally around 78 degrees. For best results use a heating element such as a yogurt maker or electric heating pad. Without direct heating the product may have inconsistent results. Allow product to sit undisturbed (do not stir) for 12-72 hours, depending on temperature. If consistently at 78 degrees it will take approximately 24 hours. If it is on a yogurt maker or heating pad it will take approximately 12 hours. If it is cooler than 78, or the temperature has fluctuated then it will take between 24-72 hours. Discard after 72 hours Product is done when it becomes carbonated to taste or with visible bubbles in container, depending on preference. Time can vary significantly, please taste test with a clean utensil regularly until carbonated. Once product is carbonated to taste, seal with loose fitting lid and immediately place in refrigerator and keep cold. too tight of lid can create too much pressure from carbonation too loose of lid will cause product to become flat more quickly mason type jars work great

Question: | After straining there was a clump of darker slimy tissue looking thing with some kefirs attached. Is this normal |
Answer: | Kefir can have all types of different appearances and your personal kefir will even change its appearance from time to time (usually with the seasons/temperatures or because you haven't fed it enough but even with different types of sugar or brands of water). I would suspect that it either got too hot or cold while being mailed and that is compounded by already being in a state of stress from not having been fed. The only way to know for sure if yours is good is to try to use it. Feed it 1/4 cup brown sugar and 1 quart of nonchlorinated & nonfiltered water to 1/4 cup kefir grains. You should probably dump the first batch or two anyway as the kefir are stressed (they weren't in "your" liquid either so there's no way of knowing how exactly they were kept). You can always rinse the grains with water (again non chlorinated and non filtered) after dumping the first couple of times if you're afraid anything is off (you shouldn't have to continue doing this - rinsing is unnecessary and you end out loosing baby kefir in the process). Feed it every 24 hours for the first couple of days whether they have eaten as much sugar as you'd like or not (helps make them less stressed). After a couple of times it should be safe to drink. It'll smell slightly funky and tart (kind of citrus like). If it smells like acetone you have something wrong (grains that are still stressed or are sick) and I would contact the seller. If it smells/tastes like sugar water your kefir are probably not viable (you should also be able to see little bubbles in your fermentation container an hour or two after feeding them). Otherwise you're good to go. They really do change appearances from time to time so it may be nothing more than temperature and stress. Mine were a little slimy looking the first week or so. Then they changed to looking almost like little chunks of yeast. Months later they're now like big clear rocks. All the same kefir kept the same way and fed the same thing. |

Answer: | You will need sugar and purified water. I have used reverse osmosis with no ill effects. Oh, and I use a metal strainer all the time. Kefir grains have no problem with a stainless steel strainer. Just make sure it's not aluminum. Although, I don't know if that will have any effect either. i do add about 1/4 tsp of molasses when I'm brewing along with a 1/2 tsp of baking soda as well as some coral calcium. This makes the kefir very happy. However, if all you have is a stainless steel strainer, use it. I've been using mine for years and I have to give away kefir grains every few weeks. |

Answer: | Unfortunately, while milk kefir grains can be converted into water kefir grains, but the same is not true in reverse. Water kefir grains do not have the necessary bacteria to break down the lactose in milk. Water kefir grains need to remain water kefir grains, I'm afraid. |

Answer: | We recommend using some hot water every time you make your water kefir to dissolve your sugar. One of our favorite tips is to only heat as much water as you need to dissolve the sugar and then mix that will cold/room temperature water. It really speeds up the process since you don't have to wait for it to cool off. Once your grains are established you could consider experimenting with using only room temperature water but there's no guarantee that your grains will be able to convert the sugar as effectively. |

Answer: | i'd say more on the indefinite time period, if well cared for. you can keep them "incubated" in the fridge for a time but you need to make sure they have enough food. These grains that I purchased from here are doing amazing!!! best grains by far. they are huge and healthy and have quadrupled in size and amount. I go about every 4-6 days in between changing the water out and adding sugar/fruit for it's food source. |

Answer: | The yeast reproduces by consuming the lactose in the milk. They also consume any other sugar existing in the cup unless excessive amounts. I know this because I tried making honey yogurt, strawberry yogurt etc by putting the fruit or the honey in the milk along with the yeast and ended up with firmer yogurt and no sugary taste like commercial fruit yogurts. The added table sugar will be consumed by the yeast and therefore yogurt is more healthy for diabetic or lactose intolerant. But if you are still not comfortable, you can use a small amount of the yeast to make yogurt and then use that yogurt to make yogurt for your husband. I simply put little yogurt or yeast in 8oz jars and pour cold organic horizon low fat milk on them, then put in to yogurt maker for 12 hours. You don't really need to boil and cool the milk before the yogurt making process unless you buy the milk from the farm uncooked. I underline little yogurt or yeast; adding more yeast or yogurt as a starter will give you sour yogurt. You also will get sour yogurt if you don't Refrigerate your yogurt after 12 hours incubation period. There is nothing wrong with sour yogurt but I don't like it, some people do. |

Answer: | It's more economic to buy the 3-pack version and not the 16-pack version as Amazon quantifies the "packs" differently. The 3-pack version has 3 boxes with 3 double-packs each for 18 total. The 16-pack version is 1 giant box (not the standard, smaller 3-to-1 box) and they count each double-pack individually, so you get 2 less packs yet pay $2.80 more. |

Answer: | It will last longer if refrigerated. You can make yogurt with the starter and a themometer. You just heat the milk to the right temperature and stir in the starter and put in a thermos or insulated container overnight or set in a warm oven overnight and you have your yogurt. If you want to buy a yogurt maker they make it easier. The starter kit is basically the bacteria that turns the milk into yogurt. |

Answer: | Yes, it brings cost down drastically! Instead of paying a minimum of $2.95 for e10 g (that is the cheapest that I have found) of yogurt starter for each 2 quarts. I Use 2-3 tablespoons or as little as 2-3 small teaspoons from your previous batch. Using tablespoons will just make your yogurt thick, add milk if too thick. I also use 2 cups of powdered milk, which helps making it thicker and of course adds more protein- but it is soo good!Remember you can only reuse your previous yogurt only 3 times. Than start a new batch with yogurt starter. |

Answer: | Great question! The "starter milk" is included to keep the kefir grains fermenting without stressing them. The starter milk is just a bit of regular milk included with the grains. Often this milk has already turned to kefir as there is such a small amount included. Throw the lot right in your first batch of kefir and you will be golden. As a newbie to kefir myself, take my info with a grain of salt. Also, I HIGHLY recommend fermenting your batch anaerobically (with a lid on). This helps lower the yeast content.
