Tomato Rice with Crispy Cheddar from Indian-ish

I could use all sorts of fancy words to explain this dish, but the best description is this: pizza in rice form. The inspiration for the recipe, though, is oddly enough not Italian—it’s a hybrid of a classic South Indian tomato rice with onions and a shockingly fantastic Spanish rice recipe my mom and I photocopied out of my seventh-grade Spanish textbook for a school project. The crispy, bubbly, broiled cheddar topping (use the sharpest white cheddar you can find!) adds a little somethin’ somethin’, making it a worthy dinner party dish. The lovely photographer of this very book, Mackenzie Kelley, called it “even better than pizza”.

Directions

1. Adjust an oven rack to the highest position and preheat the oven to 500˚F.

2. In a large pan over medium-high heat, warm the oil. Once the oil begins to shimmer, add the onion and chile, spread them out in an even layer in the pan, and cook until the onion becomes translucent and starts to lightly char, 5 to 7 minutes.

3. Increase the heat to high and add the tomatoes, using the back of a spoon to lightly crush them. Cook, stirring occasionally, until the tomatoes break down into a chunky sauce, 5 to 6 minutes, then add the salt.

4. Put the cooked rice in an 8-inch square (or similar size) baking dish, then fold in the tomato sauce.

(You can also do the folding in a separate bowl and then transfer the rice to the baking dish, if you doubt your ability to not spill rice and sauce everywhere.) Evenly distribute the grated cheese over the top.

5. Switch the oven to broil and place the baking dish on the top oven rack. Broil for about 3 minutes, until the top bubbles and turns golden brown. Serve immediately.

Answer:	Yes when it is full. I just pour any water on the butter down drain. Butter does not fall out, unless you don't have it packed in bell good. I found that is the trick. Follow directions and press butter into bell with back of tsp. Hope this helps.

Question:	Why does mold keep growing on my butter? I have followed the directions carefully and I have mold. REALLY NOT HAPPY
Answer:	It’s actually easier to wash by hand and is super quick, but if really messy, the body is like that of a coffee mug, so yes. The lil knife might rust around the handle. The lid is wood. I don’t wash my wooden spoons in the dishwasher, but if you do, go for it. The amount of time to load the dishwasher and run it, it could be sitting on your counter if washed by hand, warm water with Palmolive.

Answer:	Butter box is bigger than other styles. According to our test it w/4 sticks (1lb) - they just fit, filling it & underside of lid does touch butter, but lid still "seals"

Answer:	I ordered the white butter keeper. It was all white, smaller than the butter belle I have used in the past, but I only wanted a smaller one to have at the beach. This one holds one stick of butter. Caution: be careful in handling it though. Mine slipped from my hand, after filling it, fell to the tile floor and shattered! I still use the base, but have to keep it covered with plastic wrap and in the fridge until near mealtime 🥺 I hope this helps you. Good luck

Answer:	Just enough room for one cube of butter. I found the cover to get slippery and difficult to pull off if you fingers were even a little oily/greasy.

Answer:	I don't know how wide Kerry Golds are, but the dish is perfect for long and narrow sticks. Most of the other butter sticks which are shorter and wider do fit (just) but tend to sometimes adhere to the sides of the glass top.

Answer:	I think it probably can. I have put it in my 1200Watt microwave, with cold butter, on 10% and 20% for 30 seconds and then shorter intervals with no problems. The manufacturer didn't give any info about this so it's not guaranteed, but I think it's safe, especially if you do it with short times, even at 30% power which is usually what Defrost setting is. Hope this helps.

Answer:	I am able to fit either size in mine. However, the shorter "stubbier" type is fairly close to the edge but it still works. Probably the longer, narrower type would fit better.

Answer:	I've absolutely never heard of "coastal" butter sizes. In California, the ¼ pound sticks come in two sizes ... Long and skinny or shorter and fatter. It depends more on the brand than anything else. Now, I'm in Spain, and the butter comes in every darn size! Even my giant butter dish doesn't accommodate some of them (even though it's meant to). I was happy to find THIS butter dish because it's impossible to find a normal, small non-plastic dish anymore. When will this fad for giant table/kitchen ware ever end?????

There's a part (the piece that's laying against the spreader-in the pic, that goes on the top that is against the butter which you push down on, to get the butter out. I really liked mine, and it kept my butter fresh, but my last batch of butter became moldy for some reason? Maybe it was the butter. Otherwise...great product, and comes with a cover.

Answer:	I am not familiar with Stubbies or Elgin. The container works great if you use 1/2 of a quarter pound stick from a 1 pound package of butter sold divide in quarter pound sticks . You can always cut the butter to fit the container.

Answer:	It can use those but it is better with the wider 4 oz butter sticks, like those as Trader Joes. But we have used both with success

Question:	Can you put individual cloves, instead of an entire bulb in the roaster? (I buy bags of garlic cloves
Answer:	You could try? But I cut the top off the bulb and put the whole thing in, I rub the top with olive oil and sprinkle with salt!! They pop right out of the shell and you can spread them on crackers! It’s amazing!
Question:	Do you have to use oil to help roast it
Answer:	no, you don’t have to, but a drop of olive oil will add to the flavor & speed up the roasting time by a bit.

Answer:	The base is a tad over 4-inches in diameter, the whole thing fits in the factory box that is 4 1/2-inches on all sides. Hope that helps...
