Answer: Winsteele, I have sharpened this Wüsthof Vegetable knife, as well my other knives. My sharpener is a simple, hand held one that I bought from a local "big box" store, in the sporting goods department. It does a good job, but I'm certain that a professional sharpener would provide a more excellent edge.

Answer: I don’t know what a 9- slot Acadia is. I keep my knobes on the magnet for my knives. If it’s width you need it’s 1 1/2 in wide

Answer: Obviously , I don’t know for sure, but I was pricing these at Christmas and there were a couple of other retailers that had them for $59.95 - including Williams Sonoma. Answer: This has become our 'go to' knife for most slicing/chopping. But it is a chef's knife, not a thin butcher knife or a paring knife, so it isn't best for fine meat slicing, but if you are chopping up a chicken breast for butter chicken - no problem; cutting up meat for a stew or something requiring chunks - no problem. It is as sharp as our somewhat longer traditional Wusthof chef's knife and really amazing when it comes to working with potatoes or similar vegetables.

Answer: The Wusthof representative said that 4188 is the GOURMET 7" Santoku which is a stamped knife and 4183 is the CLASSIC 7" Santoku which is a forged knife. Both are made with the same steel, however the blade does not go all the way through the handle on a stamped knife. A forged knife goes through a longer forging process when it is made and therefore has a better balance and little more weight than a stamped knife.

The Granton-edge blade, angled on both sides for slicing and chopping, is 30% sharper and holds its edge 30% longer than ordinary Asian-style blades. The no-stick Granton edge makes a cut that forms air pockets, allowing food to release easier from the blade. Meats will cut deli-thin for sandwiches, or for stir-frying. Precision forged in Solingen, Germany, from high-carbon no-stain steel, the knife features a full tang with compression rivets to secure the high-impact handle for superior balance and maneuverability. Hand washing is recommended for best care.

Answer: Although you can put it in the dishwasher, I never place good knives there. High heat of the dishwasher dulls the edge. I have a complete set if Wusthof knives. Love cooking with them!!

Answer: I can't tel you the actually weight of the knife with out finding a scale. But the knife is light. Very light, it is a vegetable knife and very good at that. I've used it for weeks now and feels balanced and keeps an edge.
