User questions & answers

Question: Is chipping really that common? Also, will they cover under warranty? Never had any chips on my cheap knives
Answer: You never had chips on your cheap knives because they are softer metal, probably no higher than RC 58, while this is likely closer to RC 60-62 and will hold a much better edge dramatically longer. That said in the west we call this a cleaver because it looks like a traditional butcher cleaver, but is actually a cai dao which roughly means vegetable slicer in Mandarin Chinese. Use it for slicing all your veggies and boneless meats and you're unlikely to chip it.
Question: How long is the blade? Although it's labeled as 7", some other web sites list it as 7.75". Which is it
Answer: It is precisely 7 1/16” long (3 1/2”) wide.
Question: Where is this made
Answer: This cleaver is hand crafted in Japan and is a very nice blade.
Question: Can i carve a name on the knife
Answer: Oh sure if you want to do a chemical etch or you have a diamond scribe or you're very handy with a power grinder. This metal is much harder than any other knife I've used before. Good luck with that

Shun

“Shun” (shoon) is a concept at the very heart of Japanese cuisine. In Japanese, shun is the word used to describe local, seasonal food when it is at the peak of its flavor and freshness—at the peak of its perfection.

Shun Cutlery is known for its exquisite beauty and ultra-premium performance. Yet as beautiful as Shun is on the outside, and as beautifully as it performs in your kitchen, its true beauty may be in what you don’t see.

Handcrafted in Japan

Shun is dedicated to maintaining this ancient tradition by continuing to handcraft each knife in our Seki City facilities. Each piece of this fine kitchen cutlery takes at least 100 individual steps to complete. While we maintain these ancient traditions of handcrafted quality, we also take advantage of thoroughly modern, premium materials and state-of-the-art technology to provide that traditional quality to millions of professional chefs and avid home cooks throughout the world.

Knife Steel is Essential

Heat treatment—an invisible, yet vital, process. This exacting process is fundamentally important to ensuring that your Shun provides lasting value. In heat treatment, the metal is heated and cooled to change its microstructure, bringing out its very best properties. With precise heat treatment, blade steel becomes finer grained, making it stronger and harder so blades can be thinner, sharper, and give you a longer-lasting edge. Shun’s experts are, quite simply, masters of the heat treatment process.

Quality and Performance

Shun is the exact moment when a fruit has reached its ideal ripeness, when a vegetable is at its very best, or when meat is at its most flavorful. Home cooks and professional chefs alike celebrate shun in their kitchens, eagerly awaiting each season’s bounty and serving every ingredient in its proper time.

Shun Cutlery proudly takes its name from this Japanese culinary tradition of eating the freshest food at the perfect moment. We took this name to honor this seasonal, mindful way of eating and as a mark of our dedication to making kitchen cutlery that is always at the peak of its perfection, too.

Shun Classic

Shun Classics are the original Shuns, the first Japanese-style knives to be made available to a wider audience in North America. Instead of heavy ponderous blades, Shun Classic blades are lighter with razor-sharp edges and crafted from advanced steel. Rather than weighty, Western handles, Shun Classic offers the graceful control of a traditional Japanese handle.

With Shun Classic, you'll discover a wide selection of traditional blade shapes as well as unique shapes - so you can always find the right handcrafted knife for every kitchen task.

Pakkawood Handle

These traditional Japanese-style handles have a slight ridge on the right side, which fits into the curl of the fingers for a comfortable and secure grip. Viewed end-on, the shape resembles the capital letter "D". Pakkawood is waterproof, incredibly durable, and won't harbor bacteria.

Shun is Different

If you've never owned a Japanese knife before, you'll immediately notice how different a Shun feels in the hand. Shun is harder, lighter, and sharper. Sharpened to a steeper angle (16 degrees) with an edge that will hold longer, the Classic line is designed to cut in a smooth, slicing motion.

Layered Steel

Shun proprietary VG-MAX cutting core is a high-end "super steel" that is extremely hard, enabling Shun Classic knives to take an incredible edge and hold it longer.

Stainless Damascus Cladding is made of 34 layers of stainless steel on each side of the blade, for a total of 69 layers. Classic's cladding supports the cutting core, adds stain and corrosion resistance, and looks elegant.

Product description

The Shun Kanso Asian Utility Knife is beautiful multi-tasking blade—from its sharp tip, which can be used to peel ginger, to its long, straight edge, perfect for portioning meat. Shaped like a cleaver, but made for more delicate work, the the Kanso Asian Utility Knife is adept at processing quantities of vegetables for stir fry and thinly slicing meats. Every part of this knife can be put to use. Use the flat to smash a garlic clove. Use the back to tenderize meat. Use the tip and razor-sharp edge for everything from skinning fish to shaving vegetables. Once you use it, you'll find yourself reaching for this precision knife more and more often. The Shun 7-inch Asian Utility is part of the Shun Kanso series. Kanso is a design principle based on Zen philosophy. It means “simplicity,” but simplicity that is achieved by eliminating the non-essential. In Kanso, we took away anything that doesn’t matter and kept everything that does: high-performance steel, razor-sharp edge, perfect balance, and precision cutting control. The steel is Japanese AUS10A—highly refined, high-carbon, vanadium stainless steel that takes a razor-sharp edge and holds it longer. Kanso's Heritage finish hides scratches and gives Kanso a rustic look that just improves with age. The handle is made of Tagayasan wood, sometimes known as “iron sword wood." The handle contouring enables an easy chef's grip. Full-tang construction provides strength, balance, and easy cutting control. Like all Shun knives, Kanso is sharpened to a 16° cutting angle each side to cut cleanly and help preserve food’s freshness and best taste. Hand-crafted in Seki City, Japan, Kanso is essential simplicity: a simple kitchen knife that simply performs.

User questions & answers

Question: I see that people have said the handle isn’t treated/finished so it soaks up a lot of moisture, is this true? Do bits of food get stuck to/in it
Answer: The producer of this bulb may very well make them in 110 watt but all I have on-hand and in stock are 60 watt bulbs.
Question: Does this fit in the kanso knife block
Answer: Yes, this bulb is what I used for my three anemone sconces which are style 19207. These will fit your sconce and are the same brand as what Robery Abbey provided with your original fixtures. Good luck. I highly recommend these bulbs. I have my sconces on a dimmer and these bulbs have lasted over 2 years.
Question: What's the width of this blade
Answer: It fits a conventional light socket, but I suspect it is too big in length for a ceiling fan, at least with a cover over the bulb. I would also think it gets too hot for that use - its a 250 watt bulb and most fans use 40 watt bulbs.
Question: Can anyone who owns a knife like this one tell us what the blade dimensions are ? Thanks
Answer: Jacob.I can't answer that. I use it in a 250W Halogen Lamp, like a floor standing lamp. I turn it on every night to full power. And I don't notice any heat. But I don't stand over the lamp. Instead of worry about how much heat there is, worry about how long it lasts. Some bulbs last longer than others.
Question: The manufacturer is kershan, according to this website. how it’s a shun? it’s this knife original
Answer: The total length of this bulb is 4 inches.
Question: What is the "Height" of the blade? It said 3 inches tall in the description, want confirmation, thank you
Answer: The code for the frosted version is 614252. There is no LED or CFL alternative offered at this time.
Question: I have a chicago cutlery chinese chief knife. i have a hard time keeping it sharp. is it good steel. maybe i should take it to a knife shop to get it
Answer: I didn’t buy the six pack so I don’t know. The single pack is chrome.
Question: Would this fit into the Shun 11 slot bamboo block
Answer: Hi, this is an incandescent bulb that produces warm white light as is typical of incandescents. If you're looking for a cool white option, we recommend searching for an LED option. Thank you!

User questions & answers

Question: does it come with a users manual
Answer: No. They are loose and get tangled. FYI, the microphone is not very good. Callers either can't hear me, or say I sound very far away when using a normal (non shouting) voice.
Question: Can it be used to cut cow bones ..etc
Answer: I really like them. They were as good as advertised. The sound is crisp and detailed. My only thing to point out would be that this isn’t a bass heavy, if that’s something you want then you might be disappointed. I listen to all types of music so it’s a good choice for that. I had no issues with the Bluetooth connection some complained of. Works great. Seems durable. I left them in my jeans and my wife washed them. Thought they’d be ruined but they work perfectly. I will definitely buy them again if needed. 10/10 from me.
Question: i see 3 left in stock. Why is my order delayed twice
Answer: Any time a modern, high end earbud user complains of weak bass (and isn't using Etymotic buds!), 99 times in 100 its down to a poor fit. If you dont get a proper seal, it will sound like theres no bass at all, almost. Try different tips or an over-ear insertion.
Question: I have a Wüsthof 3 step electric sharpener for all my knives. Is the cutting angle of cleavers different
Answer: they are very sensitive, so I would not get an external amp. Folks argue endlessly about whether an external dac helps, which sometimes comes with an amp...depends how much stuff you like to drag around. these are reall nice for sound though
Question: Country of origin is listed as Andorra. Does anyone know where this is made? Thank you in advance
Answer: I personally have had no issues with the microphone, and I use it on a daily basis.
Question: Country of origin is listed as Andorra. Does anyone know where this is made? Thank you in advance
Answer: Replace them with Comply tips, size T-160.

User questions & answers

Question: Is this knife flexible? Does it bend at all
Answer: Yup I bet you could, I use um to pluck nose hairs
Question: What sort of edge guard would you reccomend for storing the blade? I can't find curved edge guards online, will it sheath well in a straight guard
Answer: That's raw fish. You don't want bones in a cooked fish.
Question: How long is the Warrantee
Answer: I don't think this would be effective for that purpose. I am a chef and the object with mussel beards is to separate the beard at the root. The best way to do this is by hand as you are able to fully grasp the exposed beard and pull all strands simultaneously thereby increasing the chance of complete separation at the root. This tweezer is a great tool for pin bones but would likely tear the beard strands instead of gripping them strongly enough to achieve separation at the root.
Question: Can I sharpen this knife with a Chantry Sharpener
Answer: RCI Global is the owner of the Kwizing brand and the original seller. Please be wary of other imitators that sell fake or counterfeit items.

Shun and Sharpening

Shun brand products sold by Kai USA Ltd. are backed by Shun against manufacturing defects. In addition to supporting our products, we will be happy to sharpen your Shun or Kai knife for free for as long as you own the knife.
