Answer: The Premier knives are hammered at top which is for more than just aesthetics; the blade gets thicker toward the top which helps push food away, and the hammered area helps food not stick. The handles are also different, in that the Classic handle is "D" shaped and will not work for left handed people. The Premier handle is rounded and will for right or left handed people.
Question: Are these knives any different than shun classic sold individually
Answer: It comes with a cardboard sheath for packing but not recommended to store or use as a permanent sheath. Paper is not good for the blade. I haven't found any sheaths for this knife so instead, I keep it in a wood block knife rack.

CLEANING

Victorinox Swiss Army recommends washing all knives by hand. For best results, hand wash your knives with a soapy cloth and dry immediately.

While Fibrox Pro knives are dishwasher safe, we recommend hand washing as dishwashers are designed to spray water at a relatively high pressure, which can jostle the silverware and cause the knives to collide, dulling the edge.



SHARPENING

For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best.

Answer: Made in Japan. I have serveral of them and they are great. No dishwasher and you need to sharpen them. They were recommended to me by Anthony Bourdan. These are very high quality chef's knives at a very good price. You take care of them and they will take care of you.
Question: What's the difference between "semi-stiff" and "flex
Answer: The paring knife is GS-38, about 3.5 inches, middle one is GS-3, 5 1/8 in., and big one is G-2, about 8 inches.

The Shun Dual Core 4.5-inch Honesuki Knife is perfectly designed to get in tight spaces and get the job done! Winner of the Blade Show 2014 Kitchen Knife of the Year, the Shun Dual Core series of knives creates for the first time, knives made of true layered and fold-forged Damascus from two premium quality stainless steels. Each knife features 71 alternating micro layers of VG10 and VG2 high-carbon, high-chromium stainless steels.
