User questions & answers
Question: | I want a knife to take fish off the skin. Do I want boning, utility, stiff, 6" or what |
Answer: | Flexible fillet knife |
Question: | Does boning knife has teeth ? Thanks |
Answer: | If it did have teeth you would need to brush and floss them. Boning knives are typically not serrated. The concept behind a boning knife is to clean a bone well serrations would leave excess on the bone. I hope this helps. |
Question: | Is this good for butchering live chicken |
Answer: | ABSOLUTELY! Be careful! Personally, I'd kill the chicken first. |
Question: | is it chinese made |
Answer: | Negative, all of our Millennia collection are made in Taiwan. We stand 100% behind our quality and guarantee all of our products for life. |

Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.

User questions & answers
Question: | Is fillet knife flexible or stiff |
Answer: | I bought the 11" carving knife with the rounded edge not the 7" I really like it and it is flexible. |
Question: | Can you use this knife for dicing tuna |
Answer: | Yes. However, it's not the ideal blade for dicing. This is a flexible narrow blade best suited for filleting and removing skin. A knife with a wider blade, like a chefs knife would do a better job of dicing. |
Question: | Is the white handled 7 in. fillet knife the same steel as the 6 in. black handled fillet knife |
Answer: | Hard to know, some are made with German steel and others are made with Jaanese steel. My guess is that these are Japanese steel. |

Question: | Can you use this to cut meats |

User questions & answers
Question: | what is the frequency of sharpening needed for home based use |
Answer: | If you're cutting through food where you're hitting the cutting board pretty hard, you'll need to hone the blade more often, but if your cutting soft vegetables and use the speed of your motion and not how hard you push down do the work of cutting, then you probably have to hone it once a month with regular use. Cutting through harder vegys means you're going to hit the cutting board harder though, so if you do that all the time, then you'll be honing about once a week or two weeks depending on usage. Sharpening is a different subject, and if you're not constantly banging the blade down on the cutting board, or cutting around bone which will put microscopic imperfections in the cutting edge, then somewhere between 6 months and a year with continual usage. You'll know because honing won't give you a sharp edge anymore. I LOVE this knife and use it a few times a week so I hone it about once a week, but I have a guide on my steel for 14 degrees and I have a hand sharpener that does 14 degrees each side so both honing and sharpening are VERY easy with this blade, and I've only changed the edge angle 1 degree (these come at 15) |
Question: | How thick is the spine on the Genesis Nakiri & how much does it wiegh |
Answer: | It weighs 8.3 oz and the spine goes from 2.75mm near the bolster, to 2.352mm at the center and 2.19mm at the tip. |
Question: | Exact dimensions of the blade |
Answer: | The widest part of the blade is 1 3/4 in, the center is 1 5/8 inch and the last inch of the blade narrows down from 1 inch. So this is a pretty wide blade, but very light and very sharp. |
Question: | Since this is a German knife with a Japanese heritage (made in Taiwan to boot), what is the proper sharpening angle? 22.5 or 15 degrees? Thanks |
Answer: | I've asked this question and the answer I got from a seller, and I believe you can also get the info from Mercer, is 15 degrees. There is a Wusthof sharpener that sharpens to 20 or 14 degrees. They're newer Classic lineup has blades set at 14 degrees. People saying larger angles are probably giving info for older knives, just like your question assumed two typical angles, 22.5 or 15, when in fact many European style knives have for a long time been set at 20 degrees and the finer blades are set at 11, 14 or 15 degrees. 11 degrees is for really tough metal, so different Japanese expensive blades are set that fine. Since I have the Wusthof pull through sharpener, I've set these to 14, and though I may have to hone and sharpen more often, they cut REALLY easy, and I LOVE this knife set that way. 22.5 is typically the angle for a heavy meat cleaver nowadays, or maybe knives that you buy for heavier outdoor cutting. |

User questions & answers
Question: | Where is it made |
Answer: | I've got both -- the straight one. |
Question: | Is it made in China |
Answer: | These are the exact same knives. The 47513 is the newer model. The only difference is on the 40513 it has two sets of numbers 40513 and below that 5.6413.15 and on model 47513 it has just the numbers 5.6413.15 |
Question: | How is this different from the Genesis series blade |
Answer: | A flex knife might be good for trimming bone and fat. This semi-stiff knife has proven to be good for slicing and carving as well as trimming and boning for me. So, it fits both of my needs. I have been very pleased with this knife since I bought it. I use it almost daily and have not had to scrapen the blade yet. |
Question: | Can the mercer culinary ultimate white 11-inch slicer, wavy edge be sharpened |
Answer: | You need this knife if you eat/cook meat. You can buy a whole beef tenderloin (filet) for $6-$8/lb on sale at a big box store on sale and trim it yourself. That'll save you up to $100. You definitely need three knives in a Western kitchen: a French chef's knife; a flexible boning knife, and a bread knife, which you use for splitting cake layers, too. (Make sure the latter is 10" or even 12" long for that.) You can add a small paring knife and/or 6" utility knife down the road if you like. Never buy a knife set, by the way. Knives within any one brand aren't always the best of their kind. Moreover, you'll get knives you don't need and it'll be missing knives you do need. |

Answer: | No it is not felt lined. It is very strong rubberized plastic. I would recommend it. It is a very good product. |
Question: | Are both sides sealed? In other words, shirt sleeve rather than a taco shell |
Answer: | It's a taco shell, sorry. And in my opinion (if you read my review), this POS is ridiculously overpriced. It's basically a folded piece of smooth, hard plastic. They should be selling it for 0.99 cents. Maybe 1.99 at the most! There is absolutely NOTHING that makes this item special that merits the price. If you can, try to find them in the store first so you can see what I mean and make up your own mind. I thought things were supposed to be cheaper on Amazon! Hope this helps. |
Question: | What size guards come in the Mercer 4-piece knife guard set |
Answer: | Since no one else could answer my question, I bought the guards and now can answer it myself. The four knife guards that I received in the 4-pack set are 4"x1", 6"x1", 8"x2", 10.5"x 1.5" |

User questions & answers
Question: | Is this 6 in blade? How long is the whole knife |
Answer: | No my blade is 3” and overall length is 8”. But I got the paring knife, not the produce knife |
Question: | Is the mercer m23840 produce knife sani-safe |
Answer: | I’m not sure. You’ll Have to ask the manufacturers. It has a nice ergonomic handle and a very sharp blade. I always sterilize it before cutting microgreens. |
Question: | Is this knife good for butting greens? I work in produce and cut the bottom of greens everyday will this work perfectly or too big for retail |
Answer: | I would say no . But then again I have never tried so I could be completely wrong . It’s just that It’s very long and serrated and would not be a quick tool in that capacity , I would say it would be an awkward tool based on its design and i t doesn’t come with a sheath . It’s a slicing tool , great for back and forth action but chopping I don’t think so based on the fact it’s serrated . though it’s super sharp and just might work . The length may be too long . |
Question: | Does it cut veggies well too |
Answer: | Yes, it will gut vegetables very well, although it is designed to be used to trim produce it has a standard 50/50 grind that will slice very nicely. |
