Question: Is this knife full tang
Answer: Simple science, the knife is steel. I used a magnet to try and determine the dimensions of the tang. I speculate that the tang is a trapezoid shape. On the spine side of the blade, the tang goes back the furthest, about 1 inch. On the cutting edge side, it is shorter goes back about 5/8 of an inch. I didn't try to be precise, so let's say ± 1/8 inch.

Answer: No, it does not come with a sheath. It is a very sharp, excellent paring knife.

Answer: The handles on these small Victorinox paring knives are either Polypropylene or Polyethylene. But don't sweat it, they are very durable and dishwasher safe. I have one of these with a white handle and it has lasted for at least 15 years, with weekly touchups on a diamond honing rod, and there is no visible wear at all. Victorinox cooking knives last a lifetime, and stay sharp longer than any other chef knives I've ever tried.
Question: Can you sharpen this knife
Answer: Yes, I easily sharpen mine at home with a diamond sharpener. Using 4 different grits ---200, 300, 400, 600, I can quickly & easily get it razor sharp. So sharp it will cut just by touching it. I use a steel for touch ups in between. I've used it daily for the past 9 years and it still looks and performs perfectly. Since it is so small and I use it all the time I hand wash it. Just need to be careful not to cut up the sponge/dishcloth. It holds it edge well but like I mentioned it is a daily workhorse in my kitchen so in order to keep it super sharp I give it a quick touch up sharpening weekly. If you don't care if your knives are razor sharp or don't use it daily, sharpening once every month or 2 would probably be adequate.

Question: What's the tang situation with the Victorinox? I'd like to know if the metal goes all the way to the base of the handle
Answer: No, about 3/4's of the way. With this handle type, full tang is not important.
Question: what angle is the blade for sharpening? 15 degrees or 20 degrees
Answer: From what I could roughly measure (caliper and trigonometry), the original edge relief ("back bevel") is around 14 degrees in mine, and the blade is quite thin already at the start of the relief (0.44mm), so it is easy to go without a bevel+back bevel and sharpen at 15. You can however work with a microbevel at 20, quickly retouching between resharpenings.
Question: Does this knife have enough knuckle clearance so you can dice on a cutting board as you would with a normal 8" chef knife
Answer: I think that you would have to have very small hands to be able to have a full grip on the handle to have "knuckle clearance" when mincing. I have to grip the handle without my fingers going all the way around to mince using the rocking method. The blade width is much narrower than another 6 inch chef knife that I have that allows a full grip with knuckle clearance for mincing. That said, I think that you can mince just fine with this knife, but you will have to grip it a little differently.

Answer: It's actually an 8 inch blade. They are advertising a 10 inch blade, but it's a bait and switch--you are getting the smaller (cheaper product). Like paying for an Acura and getting a Honda. I provided picture of the conflicting marking on the packaging (one saying 10 inch and a barcode for the 8 inch) and I submitted a picture of ruler measuring the blade, so buyers can see. It's a good knife, but buy it from a different seller who will send you what you are paying for.

Question: Are these serrated on both sides
Answer: The sharpened part of the serration is only on one side. The serration extends to the bottom edge of the blade, so in essence, it's serrated on both sides but only sharpened on one side.
Question: Do these ever need to be sharpened
Answer: Yes they will eventually need to be sharpened. Since most of their blade does not touch surface one is cutting on, they will stay sharp longer. Great knives, use to cut steak, fruits, and vegetables.
Question: What's the handle mase of? Plastic, wood, silicone, etc
Answer: Nylon/plastic whatever. But, they are durable knives. This is not cheap brittle plastic and the handle’s texture gives you a good grip. The Fibrox knives have forked blades inserted into the handle, then the handle is formed around the forked inserted blade. This prevents the blade from slipping out of the handle, like in cheap knives. Most highend knives will attach the blade to handle with rivets. In this case, it keeps the cost down, but give you the quality you find in more expensive knives. I love my Victornix knives! Great investment and you can just buy piecemeal, getting knives you’ll use and not a block of useless knives. I have the set of 3 paring knives, set of steak knives, a 6” utility/chef knife, 8” chef knife, a Santoku for slicing veggies and a 10” bread knife (cuts thru bagels like butter)! Then get a magnetic knife block or holder, as your blades won’t get dull when trying to slide them into a slot.

Answer: They do not rust. This is my second set. My old set is 20 years old and they show no signs of rust.

Answer: One reason not to wash them in a dishwasher is that the detergent will pit and deteriorate the aluminum handle rivets. I hand wash good knives, partly because I don't like reaching into a silverware basket which holds sharp knives. I doubt that any temper of the steel would be lost by the temperatures in a dishwasher. Tempering steel involves heating it to well over 400º F while dishwashers never get above 175º F. We all routinely wash stainless spoons and forks, and they last for decades. My knives are marked "stainless", although some stainless steels will rust or patina.

Answer: How frequently you need to sharpen any knife is based on the frequency of use! I am really happy with all of the Victorinox knives that I own - this one gets less use and therefore less sharpening! But they all tend to hold an edge and are extremely sharp plus they're an excellent value for the cost.
Question: Is this knife good for slicing raw meat too. Sometimes I buy a beef tenderloin and cut it into steaks
Answer: This knife is good for slicing raw meat however it works a lot better when the meat is partially frozen so the meat will retain its shape as you slice it. Answer: This is the best knife for the price I have ever come upon. It has a very thin blade but cuts anything. Cutting ribs will be no problem.

But, if it's the Victorinox Swiss Classic 8" Chef's Knife, there's a number etched on the blade that might be a "model number".It is 6.8063.20 I've had many "premium" kitchen knives over many years - some costing almost $200, but I have to say that this particular Victorinox Chef's knife is the best one I've ever had. I've used it daily for since January 2014, and it has never needed "sharpening". (I do use a "steel" almost every time I use it, to make sure the blade's cutting edge stays straight, especially since it's a thin blade.) Question: is this a good trimming knife for brisket
Answer: This is by far my favorite peeler I have ever owned.. I've had one more almost a year and I abuse it with carrots and potatoes... Normally this company has a warranty of lifetime. If it ever dulls or break, shoot them an email and tell them whats up and they will send you a brand new one... The only problem I face with this product is it will start hurting your hands from the grip, super thin handle but a beast in the kitchen... Order 12 and give them to friends and family and they will love you forever at this peeler, also toss all other peelers in the garbage and never buy any kind else.

Maintaining your Knife’s Edge

For optimum performance, knives should be honed after every couple of uses. Proper and frequent use of a honing steel will keep your knives sharper and performing at their best, but remember that a honing steel will not sharpen a dull knife. Honing steels are maintenance tools and are used to help keep an already sharp blade from degrading. During use, a knife edge becomes rolled or turned from direct contact with cutting boards, bones or other hard objects. In this case, honing is necessary to straighten the edge of the knife. After significant use, the steel particles become damaged and the edge cannot be brought back by honing, so sharpening is necessary. If your knives are dull, pitted, or you see visible nicks on the cutting edge, you’ll need to sharpen with a Swiss Sharp Handheld Sharpener (49002) or bring to a professional for re-sharpening.



History and Heritage

In 1884, Master Cutler Karl Elsener opened a cutlery shop in Ibach, Switzerland. There, he and the cutlers’ union he formed produced the finest steel cutlery, finished with the now-famous proprietary edge preferred globally by professional and home cooks. In 1891, Karl supplied the Swiss Army with its standard issue Soldier’s Knife and in 1897 with the Officer’s Knife. In 1921, after the death of his mother, Victoria, and with the advent of stainless steel, then known as “inoxydable” and used in the production of his cutlery, Karl changed the name of the company to Victorinox. It is from those humble beginnings that a worldwide icon was born.



Today, Victorinox is still owned and operated by the Elsener family, and both the company and family still resides in the small village of Ibach, Switzerland.

Swipe each side of the knife against the steel once or twice. Question: Are these knives full tang
Answer: I looked at the Victorinox catalog and it appears the only difference is that the 40520 was "Tested and certified bei NSF-International." They both are authentic Victorinox. This model, 6.8063.20 on page 104, appears to be the same blade as the other with different ergonomics on the handle. Being $7 cheaper from Amazon but nearly identical knife, this seems the way to go.

Question: I just received this knife set. Only the bread knife has "Fibrox" written on the handle. Did I receive the wrong items
Answer: No, I own bunch of Fibrox Victorinox knives, and they do not all say it on the handle. I think it has to do with when the handles were actually formed. They are made in a form and they may change the handle shape or wording

Answer: Even though it doesn't say "Fibrox" for them, the picture shows the handles the same. The non-Fibrox handles (Redwood) that they make are much more expensive and must be hand washed. Recommend keeping them if you like the knives. They are good ones and the Fibrox handles hold up well and are comfortable to use.

Answer: The literature says they are made in Switzerland, though it's possible the raw plastic for the handles comes from elsewhere. Doesn't matter anyway, you'll love these knives.

Answer: I use a dishwasher all the time. Steel tempering happens at ~400 - 600 degrees - my dishwasher only achieves those temperatures on the "melt my dinnerware" cycle. Knives become dull with time because of use. Learn to sharpen your knives or have them sharpened. Dishwasher has nothing to do with it.
