The sharper the edge, the quicker it will dull. That's why great grandpa had a razor strop that he honed his beard cutting steel with every time he used it. A fine razor edge on a fillet knife is important, as is the knowledge that you must hone (not sharpen) the edge regularly to maintain it.

Answer:	Get yourself a Worksharp knife sharpener, either the orig one for $60, or the updated Ken Onion edition ($120), both are FANTASTIC. I’m TERRIBLE at sharpening anything, but this thing (I got the Ken Onion edition) has made it easy, quick and best of all, a “good knife sharpener” out of me! Answer:	The polyurethane handles are always black, just like in the photo. For the commercial skinners, the metal is nickel plated (silver color) and the stainless steel skinners are a slightly more dull, silver color.

Answer:	A hair over 3/8 of an inch. These skinners are definitely not flimsy unlike what AHOTM states, their skinners must be of a different brand. These also don't open that wide, but wide enough for their purpose.

Answer:	Would not advise putting any knife in the dishwasher except for butter knives. Water being sprayed acts like a sand blaster and will dull the edge.
