Answer: | This is a 2 stage sharpener. One is coarse and one is fine. For knives that are really dull you would use both. Fist the coarse and then the fine. To touch up you would just need to use the fine. Thanks Lee |

Answer: | You really need to know the knives you have and their blade angles before buying any of these sharpeners because with more expensive blades it's best to keep them at or near the factory angle. The description says these provide two angles (both coarse and fine), 14 and 10 degree. If you have older knifes, these angles are a bit fine, as most the older knives are closer to 20 degrees. These provide the proper angles for the Classic Series Wusthof knives. Most of those are 14 degrees, but the Japanese style knives have a 10 degree angle for really fine cutting, when you want the blade to go through something with very little effort, such as cutting vegetables. Many other blade don't use these angles, including different series of Wusthof blades. Know the blade angles of your knives and it's best to sharpen close to those angles. |

Answer: | I recommend wüsthof but that's my personal preference. I have all Wüsthof knives. But its all about what suits you. |

Answer: | a Chefs knife is longer and more curved for chopping, slicing, and dicing food where a cooks knife is used for food prep. They are both very sharp out of the box. I don't think the knife police will stop by and tell you that you are using the wrong knife. Just use what feels good in your hand while working in the kitchen. I use the large knife when cutting larger items like a tomato so that I can go all the way through it. I use the smaller one when cutting smaller vegi's |
