Answer: | I wouldn't. It has an aluminum frame and plastic shell which helps. There are carbontex drag washers you can get to replace the factory drag washers. The gears are metal. At least one of the gears is brass. Some of the bushings are plastic. There is some but not enough water resistance for the bearings which will not take the salt water abuse. There are faster half-ceramic bearings you can get. You would have to freshwater rinse the whole reel then possibly relube the bearings after each use in saltwater. It's better to get a reel that's made for saltwater. |

Answer: | I don't think this would be effective for that purpose. I am a chef and the object with mussel beards is to separate the beard at the root. The best way to do this is by hand as you are able to fully grasp the exposed beard and pull all strands simultaneously thereby increasing the chance of complete separation at the root. This tweezer is a great tool for pin bones but would likely tear the beard strands instead of gripping them strongly enough to achieve separation at the root. |

Answer: | This is NOT the Damascus style knife and it is NOT made with the usual VG10 steel Shun uses with other items in the Classic Collection. Shun Classic Collection uses the very hard VG10 steel because it holds the edge longer but it doesn't have the kind of flexibility needed in a good Fillet Knife. Instead, Shun used the AUS8A, a high-carbon stainless steel that offers strength, hardness, and wear resistance, as well as a small amount of flex necessary in a good fillet knife. This knife, like almost Japanese knives is designed for slicing - a job which it does very well.If you need to chop, get a cleaver or a European knife with a softer edge ground at a less steep angle (20 deg vs 16 deg) |
