13 best santoku knives
A Santoku knife is a type of kitchen knife that originated in Japan and is commonly used for a variety of kitchen tasks. It falls under the category of chef's knives and is a versatile tool in the realm of cutlery and knife accessories.
Here are some key characteristics and information about Santoku knives:
Blade Design: Santoku knives typically have a shorter, wider blade compared to Western-style chef's knives. The blade length typically ranges from 5 to 7 inches (about 13 to 18 centimeters). The blade has a flat edge with little to no curve, making it excellent for straight chopping, slicing, and dicing.
Versatility: "Santoku" translates to "three virtues" or "three uses" in Japanese, referring to its versatility in handling three primary kitchen tasks: slicing, dicing, and chopping. It is often considered an all-purpose knife suitable for a wide range of cutting techniques.
Blade Material: High-quality Santoku knives are often made from high-carbon stainless steel, which provides excellent edge retention, sharpness, and resistance to corrosion. The blade may have a Granton edge (small divots on the sides) to reduce friction and prevent food from sticking to the blade.
Blade Thickness: Santoku knives typically have thinner blades compared to Western chef's knives. This allows for precise slicing and dicing of vegetables, meats, and other ingredients.
Handle Design: The handle of a Santoku knife can vary in design, but it is usually ergonomically shaped and comfortable to hold. Some handles are made of wood, while others are made of synthetic materials like plastic or composite.
Maintenance: Like all kitchen knives, Santoku knives require proper care and maintenance. They should be hand-washed and dried immediately after use to prevent corrosion. Regular honing and occasional sharpening are necessary to maintain their sharpness.
Culinary Uses: Santoku knives are excellent for tasks such as slicing, dicing, and chopping vegetables, boneless meats, and fish. They are not designed for heavy-duty tasks like breaking down poultry or cutting through bones, as they lack the heft and thickness of cleavers or boning knives.
Santoku knives have gained popularity worldwide for their versatility and precision in the kitchen. They are a favorite among home cooks and professional chefs alike for their ability to handle a wide range of cutting tasks with ease. When selecting a Santoku knife, it's important to choose one that feels comfortable in your hand and is made from high-quality materials to ensure long-lasting performance.

User questions & answers
Question: | what is the frequency of sharpening needed for home based use |
Answer: | The widest part of the blade is 1 3/4 in, the center is 1 5/8 inch and the last inch of the blade narrows down from 1 inch. So this is a pretty wide blade, but very light and very sharp. |
Question: | How thick is the spine on the Genesis Nakiri & how much does it wiegh |
Answer: | I've asked this question and the answer I got from a seller, and I believe you can also get the info from Mercer, is 15 degrees. There is a Wusthof sharpener that sharpens to 20 or 14 degrees. They're newer Classic lineup has blades set at 14 degrees. People saying larger angles are probably giving info for older knives, just like your question assumed two typical angles, 22.5 or 15, when in fact many European style knives have for a long time been set at 20 degrees and the finer blades are set at 11, 14 or 15 degrees. 11 degrees is for really tough metal, so different Japanese expensive blades are set that fine. Since I have the Wusthof pull through sharpener, I've set these to 14, and though I may have to hone and sharpen more often, they cut REALLY easy, and I LOVE this knife set that way. 22.5 is typically the angle for a heavy meat cleaver nowadays, or maybe knives that you buy for heavier outdoor cutting. |
Question: | Exact dimensions of the blade |
Answer: | It’s very sharp when I received it, and I used it a month still sharp. I think you don’t need to sharpen it before use. |
Question: | Since this is a German knife with a Japanese heritage (made in Taiwan to boot), what is the proper sharpening angle? 22.5 or 15 degrees? Thanks |
Answer: | 1. Submerge & soak whetstone in water; 2. Using the coarse side first, tilt the knife at the correct angle; 3. Run the knife up & down the stone in a smooth motion; 4. Ensure you cover the whole blade from edge to start of handle; 5. Repeat process on other side if knife is double-beveled 6. Flip stone to the finer side and repeat again 7. Thoroughly wash & dry knife |

Care and handling of Genesis cutlery.
The performance of a knife can be diminished if not cared for properly.
Cutlery should never be washed in a dishwasher because intense heat and harsh detergents may cause the handle to deteriorate. Carefully wash by hand with soap and warm water, rinse and dry with a soft towel. Do not soak or submerge in water for long periods of time or use chlorine bleach because it can pit and discolor the blade. Avoid soaking in aluminum or stainless steel sinks because these metals may cause pitting on the blade.
Store in a cutlery block or sheath to preserve the cutting edges and prevent injuries.

User questions & answers
Question: | How would this do on a rutabaga? Would it cut through easily |
Answer: | No |
Question: | What's the legende series |
Answer: | Legende and Classic are the same quality, with slight differences in the actual blade. The santoku blade itself is nearly identical between the two. The only difference is handle structure, with some series having entire knives exclusive to that series. |
Question: | does this knife come in/with a protective sleeve |
Answer: | If you're cutting through food where you're hitting the cutting board pretty hard, you'll need to hone the blade more often, but if your cutting soft vegetables and use the speed of your motion and not how hard you push down do the work of cutting, then you probably have to hone it once a month with regular use. Cutting through harder vegys means you're going to hit the cutting board harder though, so if you do that all the time, then you'll be honing about once a week or two weeks depending on usage. Sharpening is a different subject, and if you're not constantly banging the blade down on the cutting board, or cutting around bone which will put microscopic imperfections in the cutting edge, then somewhere between 6 months and a year with continual usage. You'll know because honing won't give you a sharp edge anymore. I LOVE this knife and use it a few times a week so I hone it about once a week, but I have a guide on my steel for 14 degrees and I have a hand sharpener that does 14 degrees each side so both honing and sharpening are VERY easy with this blade, and I've only changed the edge angle 1 degree (these come at 15) |
Question: | What is the legende series ? different from the classic wustof santoku |
Answer: | It weighs 8.3 oz and the spine goes from 2.75mm near the bolster, to 2.352mm at the center and 2.19mm at the tip. |
Product description
Style: Santoku, Steel Type: Swedish Stain-Resistant Steel, Saya Cover: Not Included, Blade: Double-Edged, Available Size: 7.0", Handle Material: Composite Wood, Weight: 6.5 oz, Hardness Rockwell C scale: 59-60.
- HIGHEST GRADE STEEL ✅: The blade is made out of high quality Swedish stain resistant steel that provides the user with the longest lasting edge retention within the Misono brand.
- BALANCED & DURABLE ✅: A distinguishing feature of the UX10 knife is the riveted nickel silver bolster, which enhances construction durability as well as balances the weight of the blade and handle.
- QUALITY ASSURANCE ✅: The brand’s famously thin and sharp knives are hand finished and inspected to ensure the highest quality product.
- MULTI-PURPOSE ✅: The santoku, meaning "three virtues", is an all-purpose knife that takes its name from its ability to easily handle meat, fish and vegetables. The high profile of the blade makes the santoku well-suited for smaller kitchen spaces and keeps the knuckles well above the cutting board.
- EXCEPTIONAL SHARPNESS ✅: 70:30 Asymmetrical bevel. By concentrating the sharpening on the face of the blade at a steeper angle than on the back, a thin cutting edge is created that approaches the sharpness of a traditional Japanese single edged design.
User questions & answers
Question: | Sounds like the steel is Swedish; where is the knife assembled |
Answer: | I wouldn't. It's a 70/30 bevel, in other words the edge isn't shaped like a perfect V, it's more like a check mark. I would guess the electric sharpener wouldn'the be good at maintaining that. If you're looking at a knife like this, consider getting a Japanese water stone like naniwa in 800 and 3000 or 5000. I had a chefs choice pro sharpener, but I sold it on eBay once I got the water stones. They're great. |
Question: | Is the left-handed version available |
Answer: | You will want to use a medium grit stone to sharpen your knife and the #1000 is the most popular one to work with for western-style knives such as the gyutou. Because the UX10 is a hard steel, you may need to work on it longer than you are used to until a burr forms. Once you put an edge on the blade, you can use the #6000 grit or any other fine grit stone to polish and refine that edge. |
Question: | Can you use a chefs choice electric sharpener on this knife |
Answer: | Yes this cuts through bone like it’s butter. Good for any kitchen job that needs heavy cutting work. |
Question: | I have a misono ux-10 gyuto, and i love the line. what's the best stones for sharpening? i use a 1000 and 6000 grit, and i can't get a good edge |
Answer: | Legende series wusthof knives are a series with a g10 polymer handle with an ergonomic grip, with the same quality or better than the other series. It is an exceptional line by the manufacturer. Highly recommended. |

Answer: | micarta |
Question: | Why is this item listed as a prime can be expected 2 day shipping and in fact it’s not??? I ordered this on Jan 24th and still have not received it |
Answer: | The 6" or 8" Salaried knife works great for me. My favorite knives. |
Question: | What is the handle made of |
Answer: | I have a 4.5" classic Cook's knife, an 8 inch classic Cook's knife, the classic 5" Santoku knife, and a Global 5" utility knife. The Global utility knife is my all around go to kitchen knife. Stay away from the Gourmet line from Wusthof. |
Question: | Hello. I'm new to cooking and dont know which one of these knives is best for easily slicing chicken breasts into thin slices, any advice |
Answer: | For me, it's all about the size of the task. I use both the 5" & 7" Santoku knives all the time. The 5" Santoku is nice for small close work, and the 7" blade works well on larger cuts. If you can only afford one, go with the versatility of the 7" knife. |
