Question: whats the rockwell scale
Answer: Sorry, I do not know the Rockwell hardness of the steel. But I can tell you that I've been using this knife everyday for the 5 months since I purchased it and all I do is use the steel to align the edges and it is still very sharp to this day. I have the 3.5 inch paring knife and it is doing the job of my 6 inch kitchen knife. I use it to butcher meat, peel and slice fruits, cut vegetables (slice a tomato with ease) almost everything except for the really big cutting jobs. I've put aside my Hinckle and my Victornox because I like this knife so much. In my opinion, it is the best knife deal at Amazon.

Question: what is the frequency of sharpening needed for home based use
Answer: If you're cutting through food where you're hitting the cutting board pretty hard, you'll need to hone the blade more often, but if your cutting soft vegetables and use the speed of your motion and not how hard you push down do the work of cutting, then you probably have to hone it once a month with regular use. Cutting through harder vegys means you're going to hit the cutting board harder though, so if you do that all the time, then you'll be honing about once a week or two weeks depending on usage. Sharpening is a different subject, and if you're not constantly banging the blade down on the cutting board, or cutting around bone which will put microscopic imperfections in the cutting edge, then somewhere between 6 months and a year with continual usage. You'll know because honing won't give you a sharp edge anymore. I LOVE this knife and use it a few times a week so I hone it about once a week, but I have a guide on my steel for 14 degrees and I have a hand sharpener that does 14 degrees each side so both honing and sharpening are VERY easy with this blade, and I've only changed the edge angle 1 degree (these come at 15)

Answer: I've asked this question and the answer I got from a seller, and I believe you can also get the info from Mercer, is 15 degrees. There is a Wusthof sharpener that sharpens to 20 or 14 degrees. They're newer Classic lineup has blades set at 14 degrees. People saying larger angles are probably giving info for older knives, just like your question assumed two typical angles, 22.5 or 15, when in fact many European style knives have for a long time been set at 20 degrees and the finer blades are set at 11, 14 or 15 degrees. 11 degrees is for really tough metal, so different Japanese expensive blades are set that fine. Since I have the Wusthof pull through sharpener, I've set these to 14, and though I may have to hone and sharpen more often, they cut REALLY easy, and I LOVE this knife set that way. 22.5 is typically the angle for a heavy meat cleaver nowadays, or maybe knives that you buy for heavier outdoor cutting.

Answer: yes, these are both leftie and rightie. Some knives have an asymetrical bevel. These knives are 50/50 bevelAnd the handle is for both hands too, not "D" shaped like a Shun handle is. For comparison, this handle feels similar to a Henkels ProS handle or a Wusthof Classic handle.

Answer: VERY GOOD QUESTION. Mercer makes two differnt boning knives in the Rennaisance series, a "stiff" one and a "flexible" one and they're both the same length. The boning knife that comes with the set is the M23550 "stiff" model.

Answer: Don't just say 'no', if you don't know. Mercer has a limited lifetime warranty for regular home use, and 25 year warranty in a commercial setting on the entire Renassaince line.
Question: Mercer Renaissance vs Mercer Genesis? Similar prices and both great reviews - just wondering which I should invest in
Answer: both are excellent values. They both have similar blades of high quality German steel. The difference is in the handles. The Genesis handle and bolster is similar to the handle of a Wusthof Grand Prix II. It is "softer" and a bit more slip resistant. It is more rounder ad molded fit the hand better, instead of like a "rectangle" like the Renaissance line is If you're cutting for many hours, you might appreciate the "cushion". Ergonomics is in the shape size and material (as well as the angle which the wrist is at when the edge meets the board). You might say that Genesis is a bit more "ergonomic", (but both are great). The Mercer Renaissance handle is similar to a Wusthof Classic, the handle type used by most companies and which most people are familiar with. It's hard, but well designed black epoxy impregnated "wood" type material.The Renaissance has very little bolster which might be good for some people when they are sharpening their knife. The Genesis comes both with a bolster and without.The Genesis seems to be "handle heavy" which means "tip light" for more precise "tip work". The soft handle and "handle heavy" bias is good if you have to exert lots of pressure such as chopping rather than slicing. So more delicate and more heavy, I prefer the Genesis. To me, the Renaissance line is a little more "neutral balance", which is probably a bit better for slicing only, and less for "tip work" or for heavy chopping . I've got dozens and dozens of knives, and think highly of BOTH the two lines. Depends on how you use them as to which of the two styles to get.BOTH are NSF certified and are in use in real world use in many commercial kitchens and culinary schools. There are other great knives on the market too, but Mercers can't be beat for value.I saw one person talk about the material of the Genesis handle wearing out. I've had mine for about 6 years and they're all fine, but I appreciate that their point and their concerns.

Answer: I was all prepared to tell you how much I loved these knives and I do love them. This is my go-to knife for bread, cheese, and tomatoes. However, I have no idea where they are made. Sorry.

Answer: These are bare bones blades meant to get beat up doing rugged tasks like boning and quartering animal carcasses. When you need a knife that you can rely on working on a line this is the type you want to grab. When you're looking for fine cuts and sophistication you'll want a higher quality blade like the genesis. If you notice, the taper on these commercial blades is a bit sharper; they do this to save money because they don't have to feather all the way back to the spine. It makes the blade look cheap but that's part of what ultimately makes these knives invaluable in commercial kitchens.
Question: Can the mercer culinary ultimate white 11-inch slicer, wavy edge be sharpened
Answer: Of course! but not with traditional whetstones. All knives can be sharpened, you just have to have the correct tools in order to do it. Just look for a serrated edge sharpener, I'm sure they sell them on amazon.
