All Enso HD knives feature a black canvas micarta handle with three stainless steel rivets, bolster and end cap.

Answer: The Enso HD 8 and 10" Chef's Knives are both 2mm thick at the spine.

Answer: The blade is 8 in, and handle is 5 in long. Knife is well made and very sharp.
Question: Can it cut through sweet potatoes easily? Sweet potatoes are the hardest vegetable I cut regularly and I'm looking for a good knife that can handle it
Answer: Seki, Japan. This knife is made by the famous Yaxell company which makes some supurb professional quality knives. This one is very similar to a Yaxell Zen.
Question: How many years does its sharpness last? Does this knife come with a sharpener
Answer: shun has many different "lines" just as yaxell (the mfgr of enso) has many different "lines".Shun classics is closest to what this knife is like. It has more "layers", but after three it really doesn't matter. The enso has enough to make it functional and pretty, but not so many that it becomes a cost issue. Enso, which is really a Yaxell Zen, has a hammered finish which takes more workmanship and might be more functional to reduce sticking, however it also requires more care because those pits, if not cared for could conceivably allow bacteria to grow under certain conditions. Shun has hammered finishes on their "elite" and premier" lines, but not on their classic line. This knife is a much better value for the dollar than the Shun.They both use a core of VG10. At one time, shun was claiming VGmax on even their classics, but they have now been caught. And VG max is just a marketing name. It's a registered trademark, not another quality steel.The Enso has a much better handle than the shun classic. It is closer to what you'd find on thee better lines of shun, or, of course, onall of Yaxell's lines. It is more comfortable if you're cutting for hours. Shun classics are generally used by home cooks. Yaxells are generally used by professional cooks and chefs so if you're only cutting for short periods, the handle doesn't really matter that much.Enso's are a little heavier because of the handles. They are about the same thickness. The shapes of the blades are roughly similar and cutting angle is similar. BOTH are 50/50 bevel.There are plenty of other great knives at the same price point, but this is a bargain if you don't mind it being branded "enso" instead of yaxell. You should also consider Tojiro, Mcuesta ,yaxell zen and yaxell dragon. I'd take any of those over a shun classic, which I think is over priced, over rated and has a crummy handle.

Answer: This is a good low end steel, it's a Chinese copy of 440a making it a solid option for a chef's knife. It should be very easy to sharpen and keep honed, but don't expect it to hold an edge forever as it's still a low grade stainless. If you can sharpen and maintain an edge it should have no issue cutting sweet potatoes.

Answer: I can't tell how long the sharpness will last but it's been a while since I got it, and it's still pretty good. It doesn't come with a sharpener just the knife by itself.

In Japanese, Sora means "sky." With Sora's proprietary Composite Blade Technology, this beautiful series offers sky-high value by bringing together a VG10 three-layer san mai cutting edge with a polished Japanese 420J stainless steel upper.

Knife Handle

The Sora line features a traditional handle design with textured TPE which provides excellent grip, balance, and easy maintenance. Topped on the end of the handle is the Shun logo in stainless steel which enhances and balances the handle.

Composite Blade Technology

Pakkawood Handle

Question: What happened to the buy one FF knife and get the second set free deal
Answer: If by edge you mean bevel then yes, it has it in both sides. It came with good sharp, not needed to be resharpened when it arived. Only sharpened it once in the last year, if you take good care of it it holds for a good time, only used a leather strop every 1 or 2 months.
Question: Is the blade angle Asian or European for sharpening

Question: what is the actual length of the blade? actual length of blade with handle
Answer: Great question! This all depends on a number of factors, such as: what you're cutting against (Shun recommends Hinoki cutting boards), if you're using a slicing motion vs. up/down chop (slicing is always the preferred method), hand wash & dry (never dishwasher), etc. In addition to the above, the best way to elongate the sharpness life of your Sora knife and not sharpen (remove metal) as often, is to make sure you are using our Shun Honing Steel (model VB0790) at least on a once-a-week basis on your go-to Shun's. This will not re-sharpen your knife, but gently re-align your factory edge back into shape. Think of our honing steel as a chiropractor for your knife's cutting edge. Also, make sure you align your knife's angle against our convenient collar on the honing steel to perfectly achieve a 16 degree angle for the stroke, and use a light touch! The lighter, the better; no need to grind into the steel. Once after proper honing, you should notice an improvement in the cutting performance.
