But what you might not know is that since the Sora line features traditional Japanese blade and handle shapes, in Japan, the Sora chef's knife would be called a Gyuto. It's used for all the same purposes as a chef's knife—all-around food preparation. But the Sora chef's has less curve than a western chef's knife, which means it contacts the cutting board along more of its length, so more food is cut per slice. The Sora has a gentle roll off the tip compared to the large roll of a western style knife, so the Sora needs to be lifted less, making cutting more efficient. Once you try the Sora chef's knife, you'll wonder what you ever did without it.

Answer: This is a good low end steel, it's a Chinese copy of 440a making it a solid option for a chef's knife. It should be very easy to sharpen and keep honed, but don't expect it to hold an edge forever as it's still a low grade stainless. If you can sharpen and maintain an edge it should have no issue cutting sweet potatoes.
Question: What is the edge shape on this Shun Sora knife? Is it a Western type edge shape of 50/50, or a more traditional Japanese edge shape of
Answer: I can't tell how long the sharpness will last but it's been a while since I got it, and it's still pretty good. It doesn't come with a sharpener just the knife by itself.

In Japanese, Sora means "sky." With Sora's proprietary Composite Blade Technology, this beautiful series offers sky-high value by bringing together a VG10 three-layer san mai cutting edge with a polished Japanese 420J stainless steel upper.

Knife Handle

The Sora line features a traditional handle design with textured TPE which provides excellent grip, balance, and easy maintenance. Topped on the end of the handle is the Shun logo in stainless steel which enhances and balances the handle.

Answer: Nope. Does not stain for me at all, and I do not even always wash it after use, usually just wipe it with a paper towel. You would have to work hard to stain it, maybe if you cut a lemon it and put it away without cleaning it...

Answer: Overall length of mine is 8 5/8" split fairly evenly between the handle (up through the bolster) and the blade.

Answer: I believe it is 15 degrees and you must sharpen using Asian vs European angle. These are very sharp blades for sure.
Question: I’m left handed. Is this knife ambidextrous
Answer: The width of this knife at the back is 14/16. Shun knives are very thin, only about 1/16 inch thick. At the very back this thickness only increases about another 1/32. The 3 1/2 inch measurement is of course the length of the sharp cutting edge. The knife would sit in a block a tiny bit further up to where the steel begins to curve in the back. These are truly beautiful knives and incredibly sharp. They do require care such as no dish washers. Always immediately hand clean and thoroughly dry and put away in a good knife block after use. Always use on a wood cutting block, no glass etc. or risk chipping the blade. If you plan to collect a set of these I would suggest eventually looking at one of the Shun Bamboo Knife Blocks.

Answer: These "knives" do not really cut,slice or chop most fruits or vegetables. Since they are plastic, they work well on lettuce. They are also useful for brownies and banana bread. An 11 year old should be able to manage using a real knife. You may consider trying a ceramic knife.
Question: Does the utility knife have serrations on it as I have seen in some of the utility knives in these sets
Answer: I’ve actually never used them for anything aside from fruits & veggies. I’d imagine they’d cut brownies better than a cake since they are wider than a standard sharp blade knife. Your cut into a cake might not be as smooth and a little mushed.

Answer: Yes, it is a full tang. There is a metal cap on the end of the knife grip, but the tang extends to the end. It is not exposed, as in the reserve version. But you can tell from the weighting and the stiffness that it's a full tang.
Question: where can you get a shun sharpened
Answer: I am reasonably sure it is. I bought one for each of my kids it is a very good knife. I have several Shun knives myself and really like them. Now for the opinion, unless you are trying keep a set together look at the Dalstrong knives. The paring knife is about 30 bucks and holds an edge well. The lower cost allows you to have multiple knives to serve different purposes. Their vegetable cleaver is outstanding for the 120 price point. I am a knife snob, I like to cook, and I can afford the Shun; however, I have shifted to the Dalstrong.

Answer: Hello - we no longer product reverse-grip / left-handed Shun Classic knives. All of our other series of knives we currently make are all ambidextrous. Hope this helps!

Answer: There is a protective sliding sheath made of thick plastic, but it's not a case.
Question: Is this knife serrated or scalloped
Answer: The blade is 7" whereas the whole knife is 15.4" long.
Question: How does one go about sharpening a serrated knife
Answer: I use a Japanese sharpening stone to sharpen mine, such as the King 47506 1000/6000 Combination Grit Waterstone. To rectify, any good ceramic sharpening rod will do, as long as you keep a 19 degree angle or so. Hope this helps.

These traditional Japanese-style handles have a slight ridge on the right side, which fits into the curl of the fingers for a comfortable and secure grip. Viewed end-on, the shape resembles the capital letter "D". Pakkawood is waterproof, incredibly durable, and won't harbor bacteria.

Shun proprietary VG-MAX cutting core is a high-end "super steel" that is extremely hard, enabling Shun Classic knives to take an incredible edge and hold it longer.

Stainless Damascus Cladding is made of 34 layers of stainless steel on each side of the blade, for a total of 69 layers. Classic's cladding supports the cutting core, adds stain and corrosion resistance, and looks elegant.
