There isn't even a dollar difference in the cost and doesn't seem to be much difference between the two except for maybe the shape. The "Ultimate" is a bit more rounded in shape. Maybe it's just personal preference.

Answer:	T-fal has an excellent nonstick coating. Whether or not it is ultimately safe at extremely high temperatures I cannot say. I do think that under normal usage the coating is safe.
