If it is to hot we turn it down. If it is not hot enough we turn it up. probably a good idea to start Min setting and work higher to the desired temperature. It is an excellent appliance.

Answer:	I'm not sure about the sharpness. Mine is still very sharp an if there is a problem you just contact the company it has a lifetime warranty as long as you register it witch I did. Just a note just about any good serrated knife will keep sharp. I have other serrated knives over 20 yrs. old and there still very sharp. Note they are not from Zulay Kitchens. Hope this helps.
