This handy 12-inch seasoned steel skillet is the only pre-seasoned and ready to use out of the box steel pan in the market place right now. Each skillet is pre-seasoned with natural soy bean oil. Maintains very low and very high temperatures, making the pan a highly effective and versatile cooking piece. It performs well in residential and professional kitchens as well as outdoors. Made of 12 gauge carbon steel. Steel is a high density metal that does not retain odors. If maintained correctly, it will last a lifetime. Thickness of the cooking surface allows the pan to heat up quickly but also retain the heat needed for even cooking. The handle angle is conducive for both stove top and oven cooking. Each handle is attached to the skillet with 3 secure rivets. As a result of the pre-seasoning process, you may see a blister or bubble of oil at the southern-most point or at the end of the handle of the cookware piece. The cookware is hanging as it rides through the electrostatic sprayer and commercial conveyer ovens at very high temperatures. This allows the oil to penetrate deeply into the pores of the cookware which creates an easy release finish. If visible, it will rub or flake off with your finger, leaving a brown spot. Question: why is this black vs DeBuyer's which is silver? both say carbon steel. thanks
Answer: I don't know but I suspect the DeBuyer's pan is made from the kind of steel that a steel griddle is made of. The Lodge pan has a very slight dimpling to the steel and it is black and looks very much like a cast iron pan but the metal is much thinner. I have been very happy with my pan. It easily cooks delicate foods like fried fish. I suspect the DeBuyer's pan would also.
Question: what is the difference between this pan that is carbon steel and a regular lodge cast iron? can i use this pan in the oven like a cast iron
Answer: Luis,There are a number of differences. First, the pan is much lighter, as the thickness of the steel is much less than cast iron. This also means that it has less "heat inertia." It heats up more quickly and evenly, and cools down faster when removed from heat, giving you much better control of the cooking process. It is very sturdy. An advantage it has over stainless steel (besides being cheaper) is that, like cast iron, you can use it at very high heat without damaging it. This makes it perfect for high temperature searing. These are the only pans I use for searing meat and fish and then finishing in the oven (yes, perfectly oven safe). As they are pre-seasoned, they start with a stick-resistance, and if used properly and NEVER cleaned with soap, they becoming surprisingly "non-stick". I sear at very high heat (you do need some oil), and all I need to do is run hot water over it, wipe it out, and maybe rub a little oil in using a paper towel.
Question: Looking for a dedicated non-teflon egg pan. Should I go with this or cast iron
Answer: I have the 12" version of this pan and use it for 4 eggs over easy at least five days a week. However, there is a learning curve with this pan and you will need to spend some time properly seasoning it and maintaining that seasoning it. When I first started using it I cursed it every morning but forced myself to adjust to it as I was coming from a nice Teflon pan. That said, for the value cast iron will also be terrific and honestly is a little more forgiving ( just remember to keep the heat on both pans a lot lower than you are properly used to and let them preheat: I go about 2 min. On medium and then reduce to just a hair under medium low on my gas range for another 2 minutes before adding butter and then frying the eggs). The 12 inch version is a must if if you are cooking for more than one. I also use it for scrambled eggs and omelets for which it now does a good job after having been seasoned well beyond what comes from the factory.

Seasoned cast iron propelled Lodge from the position of a regional manufacturer to the national stage, with Good Housekeeping presenting a “Good Buy” Award for the product enhancement. Our appearance on the national stage expanded throughout the first decade of the new century, with record sales leading Lodge to the largest expansion in our history.

While we are proud of our recent history, there is a backstory. So travel with us to the small town of South Pittsburg, Tennessee at the end of the 19th Century. Nestled at the base of the Appalachian Mountain’s Cumberland Plateau and on the banks of the Tennessee River, the town was abuzz with new opportunities.

In 1896 Joseph Lodge began a cast iron foundry, named in honor of his minister, Rev. Joseph Hayden Blacklock. Family owned, our origins were humble and our products varied, from stoves, to skillets and kitchen sinks.

As each decade passed, Lodge developed a business model to continually update and improve equipment and foundry practices. Work was labor intensive, with all of our cookware poured and cleaned by hand.

The 1950s saw the installation new molding machinery, mechanized sand delivery systems, the construction of a gas fired aluminum furnace to cast patterns for the production of sand mold impressions and a machine to clean castings.

When the introduction of new cookware metals and coatings increased competition in the 1960s, Lodge countered with a Disamatic automatic molding machine. Two years later, Lodge added an electric furnace to operate the Disamatic molding and pouring system, outpacing the capacity of the coke-fired cupola, at lower cost.

The Clean Water and Air Acts of 1970 led American companies to install new equipment to meet the pollution control laws. Lodge accepted the standards by replacing the old electric furnaces and adding a second Disamatic molding machine.

Not only did the updates meet the requirements of the Clean Air and Water legislation, by 1976 our automated processes produced as many molds in an hour as one man’s daily productivity 30 years earlier.

With the switch from antiquated electric furnaces to more efficient induction furnaces, 1991 proved to be a pivotal juncture in the green standards of Lodge Manufacturing Company. The use of magnetic energy to produce heat changed our status from a Large Quantity Generator of Hazardous Waste to a Small Quantity Generator, and we received the 1994 Tennessee Governor’s Award for Excellence in Hazardous Waste Reduction.

Today, Lodge Manufacturing Company maintains a zero hazardous waste stream foundry, earning accolades from the environmental and manufacturing communities.

Question: i have a lodge cast iron pan it says 10 in on bottom but messgers 12 on top what size lid do i need
Answer: You need a 12" lid. With the advent of wood-burning stoves, pans were produced to conform to the sizes of the openings in their tops known as "stove eyes." The 10 is the stove eye not diameter of the pan top.
Question: What's the difference betwen this lodge 12" lid (gl12) and the other lodge 12" (gc12)? will both fit the same 12" skillets? same heat resistance
Answer: I got an official answer from Lodge The GL is the newer version. The only difference in the GL12 and GC12 tempered glass lids is the knob on the top. The updated GL12 has a silicone knob that is oven safe to 400 degrees F. The older version (GC12) has a plastic knob, but it is still safe to up to 400 degrees F.
Question: In which country are these tempered glass lids manufactured
Answer: My order arrived just today. According to the retail box: 10¼" skillet is made in USA. The matching glass lid is made in China.

Answer: Hello, I use it on electric every day, For me it takes about 10 minutes to heat up on medium setting. It may heat up faster or slower depending on the quality of stove you have, my stove is a low quality stove, one of the good things about cast iron is you can also use it in the oven. Hope this helps
Question: The larger skillet arrived with some black bits flaking off. Is this normal or should it be returned
Answer: Ours came the same way. Don't worry it is part of the casting process. A good dry scrubbing will loosen and remove it. Then season it as per the directions. DO NOT short cut the seasoning process. Do it right and they will last for a century or more.
Question: How much does each pain weight
Answer: The big one is 2 hands heavy. I'm 75 ,225 lbs and it's a great pan but I use 2 hands to take it from drawer in bottom of stove to top of stove. My days of swinging cast iron pans are over. Medium and small are fine.

Question: How high is the lip on the pan? Could I use it to fry something in a half inch of oil
Answer: Lip is about one half inch and rounded. I would never use this pan with more than a coating of oil. Using more could cause a spill and fire.
Question: I like to make small personal pizzas, will this work instead of the 14" pizza pan which is too big
Answer: It is excellent for this purpose, but you should also consider the Lodge pizza griddle. I preheat to 500, insert my pizza on a pizza screen and then slide off onto the cast iron after 4-5 minutes. I lightly oil the screen but not the pan. The 14" griddle is a terrific pan for many purposes, and it retains higher heat even if you're only using a small part of the surface. Some people use it as a "pizza stone." I use both these pans very frequently.
Question: Does this pan work on an induction stove
Answer: It works.... but you've got to really watch it ... The cast Iron ware I use (1 vintage wagner bought at a yard sale, and 2 new lodge products) gets too hot and in turn heats the induction plate so high it turns off... I have a salton portable cook top from costco (similar to ASIN:B00FAD57SC Salton Induction Cooker Energy efficiency 300W-1800W, 140F-465F)

Answer: The Lodge skillet is EXCELLENT tool in making a variety of foods including rotis/chapatis/breads, grilling etc. Have been using it for the last 20 yrs. HIGHLY RECOMMENDED.

Caring for your cast iron doesn’t have to be complicated. Lodge cookware comes already seasoned and ready to use, so you can make your family's favorite recipes right away. Question: Does this pan warp easily
Answer: We have the larger version (12 5/8 inch)....It is a tad heavy, but manageable......"It is what it is"....Carbon Steel....It has a tad over 9" of cooking surface and over time develops certain non stick qualities....Eggs slide right out.......It can take high heat without damaging the pan which is a plus when cooking certain foods.....
Question: Is the bottom rough? It looks like the bottom of a cast iron skillet. Pans from other manufacturors look reasonably smooth
Answer: I have the 11/5/8 or 062005 pan and its bottom, that would touch an induction stove top, is 8 and 3/4 ".

Answer: They're out of stock because the review from Cook's Illustrated took the company by surprise. They're apparently making more as fast as they can. Question: Is the sillicone hot handle holder removable
Answer: I don't know if they've recently changed the design of these pans, but I just got the 8 5/8" size and the diameter of the cooking surface (the INSIDE flat bottom) is only 5 3/4" not 6 1/8". I'll need to send this back for an exchange. Really wish there were full accurate measurements somewhere. By the way, I also have the 11 7/8" size and the cooking surface is 8 7/8", not 9 1/8". I suspect the measurements from Matfer are for the OUTSIDE bottom of the pans.

Answer: Just received the 12" set today. The skillet is L10SK3 (there's also a F4704 on the next line), and the lid is GL12. They both look good.

Answer: Overall size is 20X10.44 inches. It is designed to fit over two (front to back) burners on most home ranges. The exact fit will be determined by the exact measurements of the distance from the front edge of the front burner to the back edge of the back burner. The maximum length has to be approx 19.5 inches to accommodate this griddle.
Question: where was lodge LPG13 Pro Grid cast iron grill made
Answer: Slight correction to comments. All Lodge "seasoned cast iron" is made in South Pittsburgh Tn. But sadly, Their enamel cast iron is made in China.
Question: Does it work on an induction cooktop
Answer: I have a Samsung induction cooktop (this model NZ36K7880US) and can report it DOES heat evenly and consistently on that model when the ridges face down. It does NOT work with a family member's thermidor. So it is dependent on your induction cooktop.
Question: I have an electric stove with the glass on the top. Is this griddle good on electric stoves
Answer: I've used mine on my electric glass cooktop as well as in the oven. It works great with both. I'm very happy with this.

Answer: Lodge has always taken pride that all of it's cast iron products are made in the USA. Note that Amazon also offers other cast iron products that are not made in the USA.
Question: Is the surface smooth or pebbled? have read several reviews complaining about the new surface
Answer: The preconditioned surface us ok but I sand all my pans down to raw metal then I coat them with organic flax seed oil and place in a500 degree oven upside down for 2 hours let it cool. Then I do it again at least 2 to3 more times. This bakes on a protective coating. Have a lot of lodge pans and griddles. Love them and they will serve you well for many years
Question: How good does thie bristle brush work
Answer: Frankly, while I love Lodge cast iron, I was a little disappointed in the bristle brush. I would have preferred a brush with stiffer bristles that would more aggressively attack the stuck-on residue on the pots and skillets.

Answer: I have a 12" skillet. The internal walls measure 2 1/4" . Hope that helps!

Answer: 1. season your salmon with some oil seasoning paste (oil + seasoning+ salt+ other spices of your choice). Let rest for 10-15 mins for the oil seasoning paste to be absorbed into the fish. If you don't like highly-seasoned foods, then make sure you buy good quality salmon, and you can just season it with some salt and a thin layer of oil, then adding some fresh lemon juice before serving. If you want to skip the oil too, then you need the part of the salmon that has more fat)2. Heat the pan until very very very hot, you don't need to put oil into the pan.3. Use medium high heat. Put the fish with the side you want to present on the plate DOWN. Seal for 2-4 mins depending on the thickness of your salmon.4. Flip the fish when you see the meat is almost half way cooked (you will notice the cooked part has a slightly different color)5. Turn OFF the heat or turn the heat down to low, because the heat from the pan will cook the meat for you and this process will prevent from over-cooking your fish.6. Cook for about 2 to 3 mins or until you see the color of the fish meat is slightly pinkish and when you press the fish with your finger the meat will not bounce back.7. Serve with some freshly cut lemon wedges, the squeeze the lemon juice on the fish before eating.

Answer: Cast iron cookware is my favorite! I usually just rinse with hot water and use a mild scrubber on mine. After some time, however, my cast iron gets buildup on the sides - I put the pans in the self-cleaning oven and they come out like new. They do have to be re-seasoned but that doesn't take much effort. I'm sure it would work fine on this ridged pan that is sure to be more difficult to clean.
Question: how does this compare with the much more expensive enamel coated version? and why
Answer: Much better. I have this Lodge and the LC enamel version. Trust me on this - never buy this style pan with enamel coating. Grill type pans are more difficult to clean because of the ridges, nooks & crannies. Because cast iron seasons better and becomes more non-stick than enamel, it is MUCH easier to clean with use. My LC is in the garage awaiting disposal. I love LC, but their grill pans should be avoided.

Grill type pans are more difficult to clean because of the ridges, nooks & crannies. Because cast iron seasons better and becomes more non-stick than enamel, it is MUCH easier to clean with use. My LC is in the garage awaiting disposal. I love LC, but their grill pans should be avoided.

Answer: I do not know the answer. I have purchased a glass lid for the 12 in pan. Not aware if Amazon sells the cast iron lids.
