The Tri-ply cookware line that I have purchased (from Amazon and elsewhere) features a 3-ply design, 18/10 steel cooking surfaces, aluminum cores for the even heating, and the highly polished exterior 18/0 stainless for lasting beauty and induction compatibility. Answer: | The pan has sloping sides so it's a little indefinite. On the generous side, I'd say about 10 inches. On the plus side, this pan will easily hold 4 chicken breast halves or 6 thighs. The neat thing is that you can make a nice reduction sauce, using this same pan. Once you've sauteed the chicken and set it aside, you can add a little cooking wine, salt, pepper and your favorite herbs to make the reduction. The All-Clad Stainless Steel 13 inch Flat Whisk (T-134) does a great job. |

Answer: | First off, This is the pan I use the very most out of all my cookware. It's volume makes it ideal for one skillet family-sized meals. A sauce pan will typically have sides that are straight up and down and higher; allowing for less evaporation. The wide base of this pan can actually function as a skillet, and I have used it for this. Your finished product will just retain a bit more moisture. Truly, If I had to have just one pan, this would be it. I use it nearly everyday; while I use my saucepan less frequently. I always pre-heat on medium low for a minute or two before adding butter or olive oil, and it is a fantastic pan. |

They somehow decided not to laminate the stainless still bottom plate to the griddle like they did on the pots and frying pans. I use the all the time on my induction unit. Look at the product pictures that show them in the dishwasher and see the stainless steel bottom plate laminated on the anodized aluminum pans, but there is none on the griddle. |

Answer: | The 12 inch is tri-ply of stainless steel, aluminum, stainless steel. The d5 is ss/al/ss/al/ss. I have no idea why 12 inch d5 is listed at 3 pounds compared to the 4 pounds of a 5112 12 inch. That doesn't make sense. The 12 inch d5 non stick skillet I have is pretty large and heavy. I'm not sure I would use the 12 inch for flipping things as it is pretty large in diameter. I use it for its surface area and I can flip things if I really need to. It is heavy though. |

Answer: | For me, the difference is worth it. Since my children are all grown and on there own, I don't cook in large quantities anymore. So the small potsare just the thing for everyday cooking. I'll cook potatoes for mashing in the 2 qt. and a vegetable in the 1.5 qt. I also have a 3 qt. with steamer, a 4 qt. for cooking soups and spaghetti, and a 6 qt for getting veggies ready for canning. I kept a 1 qt. pot from my old set of Revere Ware and use it for sauces. |

Answer: | They do not work well on induction. Takes a long time and very high heat setting to heat up, compared to an all steel pan. |

Answer: | All-clad makes a superior product. I use both Calphalon sear and slide line and All-clad non stick with one reservation, their HA 1 line. First they are made in China and they have the worst handles ever created. I am a retired Chef with over 40 years experience. I have used many different pots and pans in my career and never used a pan with such an uncomfortable handle. The way it's made it cuts into your hand when you lift it, even with out food in it. With food it's even worse. If you want to use All-clad, buy their regular line of pots, not the HA 1 series. |

Answer: | My 8 inch pan is exactly 8 3/8 inches across the very top of the pan outside edge to outside edge. This is where the lid would rest. I use the lid from one of my 3qt All-clad pot which the dimension on the lid where it sets inside the fry pan is 7 3/4. The fry pan has a little roll down on the stainless. I hope that is clear and helpful. |

Answer: | The answer is two inches. My pan is a 12" skillet. You can fit a whole extra piece of chicken in a 12" pan that won't fit in a 10". Frankly, you need both, and I already had a 10" skillet. I would have bought the 14" but my stove probably isn't large enough. |

Answer: | With D7 alternating layers of aluminum and steel, it's going to be slow to respond to changes in heat. It's best suited for braises and other long-cooking items where steady heat is the key. The Copper Core line is designed to quick response to changes in heat input, ideal for sauteing and other quick-cooking methods, where you may need to quickly change from med-high to low heat, for example. Both pans will work fine under a broiler, where heat comes from above the pan. The D7 will hold more heat, which may be desirable for a thick steak in a hot pan, but it won't spread heat as evenly. In a skillet, I think Copper Core is a better choice for most applications. |

Answer: | Yes, you won't find a better stainless pan anywhere on the market. Only stainless steel comes in contact with the food. Neither copper or aluminum can leach through the stainless interior |

Answer: | The biggest thing I have noticed is how fast the pan heats up. If I'm cooking something for a long time (40 mins or more), I don't care as much for speed. In fact, the D5 might be better for that. This is the preferred fry pan I use when I want to cook something quickly, like in the mornings before going to workI have a 3-ply, a D5, and a copper core. All fry pans I bought on sale. I really love seeing that "Made in USA" etching on the bottom. |
