Answer: | Old question but I will hopefully answer correctly. From the information I have gathered thus far, all aluminum products have the same or similar coating as other non-stick cookware. So, I don't know the value of using aluminum over traditional non-stick other than maybe specific considerations for heat/etc. According to a quick general search, non-stick coatings should be PTFE free. when reseraching specifically aluminum, research says the aluminmum is coasted in a layer of "oxide". Maybe that means it is a thin layer of a nonsticky metal. That is where my info ends, I can't get any more specifics. In the end I al staying away from anything saying non-stick/coating. |

Answer: | It's not Ceramic (inert), and note they DON'T say it's PTFE free. PTFE produces potentially toxic (to pets & birds) fumes at higher temperatures -- also I think it sheds so it ends up in your food (shedding is different than reacting with foods) Shedding is like wearing out a car tire; that rubber is lining roads or in the atmosphere, like PTFE is being ingested, breathed in or in the air while cooking. So Teflon-like non-stick still has PTFE even if no PFOA.Ceramic non-stick is not a "wonder" replacement - it seems once Ceramic gets a film layer (from spray oils, normal cooking, etc.), food will stick and people are throwing it out & calling it terrible. Manufacturers promoting "Green" but poor at disclosing use info (like front load washers manufacturers denying there's a smell or mold).So I would try Ceramic, knowing that it will not work well if you can't keep it film-free (or it's bad manufacturing resulting in delamination). |

I seasoned mine over a hot gas cooktop olling it back and forth, around and around to keep the oil on all sides - letting it sit without doing that, the oil just puddles in the very center. so seasoning in the oven is probably not the best option. |

How to Cook with Nonstick
