Answer:	It works great on an electric stove. I have one and love it. Matter of fact, I like it so well I bought one for my daughter for Christmas. It works great with steaks, burgers and sliced veggies. Haven't tried shrimp or chicken yet, but I'm sure it will be good, too. You can sear the outside while the inside of the meat stays pink.

Answer:	Depends on your stove... I use gas stove with high flame so it sears my steak well... especially if I press the meat with a tong on different points and I actually hear the searing sound.

Answer:	Grillers are ok... but Grillers Prime are -so- much better. It's the first time I've tried Gardien's ultimate beefless patty. It wasn't bad but it makes a mess in the microwave. I have to say I like Grillers Prime best. Gardien's texture is like a cheap pre-made real meat hamburger. Their meatballs and ground beef crumbles are great though.

Answer:	If you clean it well ( I used no fumes oven cleaner) And a stainless scrubber, you're good to go. You will never have smoke from the flat top. I guess it is Possible with it turned up full blast and a fattier piece of meat maybe you could get it to smoke. I cook chicken and burgers, no problem there. I also bought a Nemco Grill Scraper, a must if you own a flat top. It's not cheap but worth every penny. I also bought extra blades. Probably never even need them as I don't use the grill everyday. In my city drawings I always try to accentuate the characteristics that make a city unique. For example, the organized chaos of a favela in Brazil, the towering majesty of a skyscraper in New York, or the historic façades of Parisian row houses. I try to capture something that illustrates something unique about that place.

Asian Short Rib-Noodle Bowl from Instant Pot Miracle

Short ribs are ideal for the Instant Pot—whether they’re slow-cooked, as they are here—or are cooked under pressure. Either way, this tough cut turns so tender it literally falls off the bone. In this case, that’s into a flavorful broth bursting with chewy udon noodles and sweet, crisp snap peas.

Directions

Prep:

In a large nonmetal container or large resealable plastic bag combine soy sauce, beef broth, sugar, salt, garlic, ginger, sesame oil, minced green onion, and crushed red pepper. Mix until sugar dissolves. Add short ribs, pressing to fully immerse ribs in marinade. Let ribs marinate for 1 hour at room temperature or in the refrigerator overnight.

Transfer ribs and marinade to Instant Pot. Secure the lid on the pot. Open the pressure-release valve.

Cook:

Select slow cook and adjust to more. Cook for 5 to 6 hours or until meat is tender. Press cancel.

Serve:

Once cooking is complete, transfer ribs to a large bowl. Cover to keep warm. Skim the fat from the liquid in the pot. Select saute and adjust to normal. When liquid is simmering, add noodles and snap peas. Return to a simmer and cook for 4 minutes. Press cancel.

Divide noodle mixture among large, flat soup bowls. Top each serving with a short rib. If desired, sprinkle with sesame seeds and green onions.

Lemon and Pea Alfredo

Fusilli con buco is one of my favorite pasta shapes for a creamy sauce like Alfredo that coats the long curlicues, and they’re fun to eat because they can be scooped up with a fork without any twirling. This is a summery take on Alfredo, with the bright colors (and flavors) of lemon and peas and mascarpone.

Recipe

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until just under al dente, 10 to 11 minutes.

Meanwhile, once you’ve added the pasta to the boiling water, heat a large straight-sided skillet over medium heat. Add the butter to the hot pan. When the butter is melted, add the garlic and cook, stirring often, until soft and fragrant, about 1 minute. Add 1⁄2 cup of water from the pasta pot and reduce the heat to low.

When the pasta is ready, transfer it to the pan with the sauce using tongs; reserve the pot of cooking water. Raise the heat to medium and sprinkle 11⁄2 cups of the Parmigiano-Reggiano onto the plain pasta. Stir with 2 wooden spoons to combine. Add the mascarpone, lemon zest, and 3⁄4 teaspoon salt. Toss well to coat, adding additional hot pasta water as needed to thin the sauce and to finish cooking the pasta. Add the peas, lemon juice, and the remaining 1 cup of Parmigiano-Reggiano. Toss well to combine, adding pasta water as needed to thin the sauce to your desired consistency; you will probably use close to 11⁄2 cups pasta water total. Sprinkle with the ground pink peppercorns and additional Parmigiano-Reggiano, if desired.

Cook’s note: Look for pasta brands such as Rustichella d’Abruzzo or Setaro.
